Crunchy Roasted Potatoes | Veggies Recipes | Weber BBQ image

It’s only a little extra effort to par-boil the potatoes, but it’s well worth it! These potatoes are fluffy on the inside with the perfect golden crunch on the outside.

4 large red potatoes, peeled and quartered
4 tablespoons olive oil
2 teaspoons sea salt
1 teaspoon freshly ground pepper
2 tablespoons finely chopped fresh rosemary leaves
½ lemon, roughly cubed

Steps:

  • On a side burner or stove top bring a saucepan of water to a boil. Add the potatoes and boil until soft enough to pierce with a knife, about 20 minutes. Drain all the liquid from the saucepan.
  • Prepare the barbecue for indirect cooking over medium heat (190°C to 230°C). If using a Weber Q barbecue, set up your barbecue with a convection tray and a trivet.
  • Add the olive oil, salt, pepper, rosemary and lemon cubes to the pot with the potatoes. Vigorously shake the pot to roughen the potatoes and evenly coat with the olive oil and seasonings.
  • Remove the potatoes and lemon from the saucepan and place directly onto the barbecue. Roast the potatoes over indirect medium heat for 40 to 50 minutes, with the lid closed, or until golden.
  • If desired, finish with an extra season of salt and pepper.

BBQ Pork Chops – Instant Pot Recipes image

Number Of Ingredients 12

1 tbsp paprika
2 tsp brown sugar
2 tsp salt
1/2 tsp chili powder
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp pepper
1/4 tsp cayenne (optional)
2 tbsp olive oil
4 bone-in pork chops
1 1/2 cups chicken broth
1/3 cup BBQ sauce

Steps:

  • In a small bowl combine the Spice Mixture ingredients and use to season both sides of the pork chops.
  • Add olive oil to the Instant Pot. Using the display panel select the SAUTÉ function.
  • When oil gets hot, brown the meat on both sides, 3-4 minutes per side. Meat will not be cooked through. Do not crowd the pot--you may have to work in batches. Transfer browned meat to a shallow dish and cover loosely with foil.
  • Add broth to the pot and deglaze by using a wooden spoon to scrape the brown bits from the bottom of the pot.
  • Put the meat back into to the pot.
  • Turn the pot off by selecting CANCEL , then secure the lid, making sure the vent is closed.
  • Using the display panel select the MANUAL or PRESSURE COOK function*. Use the +/- keys and program the Instant Pot for 7 minutes and adjust to LOW PRESSURE.
  • When the time is up, let the pressure naturally release for 10 minutes, then quick-release the remaining pressure.
  • Remove the pork chops to a foil-lined baking sheet and brush with bbq sauce. Set the pan under the broiler until meat is caramelized and bubbly, 3-4 minutes. Serve immediately.

    2. Peel and cut the potatoes into 3mm-thick slices, then cook in a large pan of boiling salted water until just tender. Drain well, then transfer to a large baking dish.
    3. Melt the butter in a large non-stick pan on a medium heat, stir in the flour, followed slowly by the milk and cream, then simmer gently until thickened, stirring continuously.
    4. Remove from the heat, grate in and stir through most of the cheese, then season to perfection with sea salt and black pepper.
    5. Pour the sauce over the potatoes, grate over the remaining cheese, then bake for 45 minutes, or until golden and bubbling.
