1 pinch steak seasoning, or to taste
1 pinch garlic salt, or to taste
1 pinch ground black pepper, or to taste
1 pinch chili powder, or to taste
1 (4 pound) package boneless country-style pork ribs
1 cup barbecue sauce
¼ cup Worcestershire sauce
¼ cup soy sauce
¼ cup teriyaki sauce
¼ cup orange juice
2 dashes hot pepper sauce, or to taste

Steps:

  • Mix the steak seasoning, garlic salt, black pepper, and chili powder in a small bowl. Rub the ribs all over with the seasoning mix, and place into the bottom of a slow cooker. Pour in barbecue sauce, Worcestershire sauce, soy sauce, teriyaki sauce, orange juice, and hot pepper sauce. Liquid should not cover the ribs all the way.
  • Set the cooker to Low, and cook until ribs are tender, about 8 hours.

This slow cooker pulled pork recipe is a guaranteed crowd pleaser. Marinade the pork over night before adding to the slow cooker for maximum flavour.

(4lb) pork shoulder, excess fat removed

200 g

(7oz) barbecue sauce

1 tbsp.

light brown sugar

2 tsp.

worcestershire sauce

2 tsp.

sweet smoked paprika

1 tsp.

chilli flakes

2 tsp.

mustard powder

Few sprigs thyme, leaves picked

2

2 garlic cloves, crushed

3 tbsp.

white wine vinegar

Brioche burger buns

Small handful fresh coriander leaves

Coleslaw

Hot chilli sauce

Steps:

  • If you can, marinade the pork overnight before you plan to cook it. In a large bowl, mix the sugar, Worcestershire sauce, spices, thyme and garlic together then stir in the vinegar to make a paste. Add the pork and rub all over. Cover with cling film and leave to marinade in the fridge overnight. If not marinating, mix the ingredients together with generous seasoning, rub over the pork, then put into the slow cooker.  

    If you have marinated the meat, lift the pork out of the bowl and add to the slow cooker, discarding the juices. Season the pork well. Pour in the barbecue sauce and toss the pork in the sauce to coat. Cook on low for about 8hr, or until the pork shreds easily. Halfway through the cooking time, quickly open the pot, turn the pork joint over and cover quickly with the lid again (don’t leave the pot uncovered for longer than necessary, as the meat will take longer to cook).  

    Transfer pork to a large board and shred with two forks. If you want a thicker sauce, pour the juices from the slow cooker into a large saucepan and boil until reduced down to a thicker consistency. Add the shredded pork to the pan and stir to coat. Serve in brioche burger buns with coleslaw, some coriander leaves and a few drops of hot chilli sauce.

Adding lots of black pepper and a few dashes of Southern-style hot sauce, like Crystal, Louisiana or Tabasco, is a very good idea. Like many braises, the pork improves overnight and can be cooked up to three days in advance; shred and warm it gently on the stovetop before tossing it with sauce and serving. Turn off the pressure cooker and allow the pressure to release naturally for 15 minutes. Open the lid. Using tongs or a slotted spoon, remove the pork and onion bits to a large serving bowl. Using two forks, coarsely shred the meat. Add 1/2 cup barbecue sauce and a few spoonfuls of the cooking liquid to moisten. (Discard remaining cooking liquid.)
