Easy barbecue chicken and potato dish. I prepare this on Sunday morning, and it is ready when we get home from church. It is hearty, and we never have leftovers.

3 pounds skinless, boneless chicken breast halves
6 potatoes, cut into bite-sized chunks
1 onion, chopped
½ cup ketchup
6 tablespoons brown sugar
¼ cup Worcestershire sauce
¼ cup white vinegar
¼ cup margarine
2 tablespoons lemon juice
2 teaspoons dry mustard
2 teaspoons salt
2 teaspoons paprika
2 teaspoons chili powder
1 pinch red pepper flakes

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Arrange chicken breasts, potatoes, and onion in a large baking dish.
  • Mix ketchup, brown sugar, Worcestershire sauce, vinegar, margarine, lemon juice, dry mustard, salt, paprika, chili powder, and red pepper flakes in a saucepan. Bring sauce to a boil, stirring constantly to dissolve brown sugar and salt. Pour the sauce over chicken and vegetables. Cover dish with aluminum foil.
  • Bake in the preheated oven until chicken is no longer pink, the juices run clear, and the sauce has thickened, about 2 hours. An instant-read meat thermometer inserted into the center of a breast should read at least 160 degrees F (70 degrees C).

4-1/2 pounds bone-in chicken breast halves, skin removed
2 tablespoons garlic powder
1 large red onion, sliced into thick rings
1 bottle (18 ounces) honey barbecue sauce
1 cup Italian salad dressing
1/2 cup packed brown sugar
1/2 cup cider vinegar
1/4 cup Worcestershire sauce
2 tablespoons liquid smoke, optional
10 medium potatoes, baked
Optional: Crumbled blue cheese and chopped green onions

Steps:

  • Place chicken in a greased 5- or 6-qt. slow cooker; sprinkle with garlic powder and top with onion. Combine the barbecue sauce, salad dressing, brown sugar, vinegar, Worcestershire sauce and, if desired, liquid smoke; pour over chicken., Cover and cook on low for 6-8 hours or until chicken is tender., When cool enough to handle, remove chicken from bones; discard bones and onion. Skim fat from cooking juices. , Shred meat with 2 forks and return to slow cooker; heat through. Serve with potatoes, 3/4 cup in each. Top with blue cheese and green onions if desired.

  • To Prep Prepare the chicken by rubbing it with salt inside and out. In a small bowl, combine Lee Kum Kee Premium Soy Sauce, dark soy sauce, Shaoxing cooking wine, sugar and the ginger juice. Cook for approximately 1 hr, checking occasionally to ensure it’s not overcooked. (Meat temperature near the bone should be 75?) Once ready, remove from the BBQ and rest for 10 to 15 mins. After removing the chicken from the BBQ, drain the potato marinade and cook the potato on the BBQ hot plate while the chicken is resting. (BBQ lid up now) For the dressing sauce, combine all dressing ingredients in a bowl and stir until sugar is dissolved. Cut the chicken and serve with a drizzle of dressing, fresh coriander leaves and the shredded potato on the side.
