Chicken Barbecued in Foil Recipe: How to Make It image

My family is happy when I serve barbecued chicken at unexpected times throughout the year. I'm glad to do it...the use of foil in this oven version means no mess!

Number Of Ingredients 11

3/4 cup chopped onion
1/2 cup ketchup
1/4 cup lemon juice
3 tablespoons butter
2 tablespoons Worcestershire sauce
1 tablespoon brown sugar
1 teaspoon ground mustard
1 teaspoon vinegar
1 broiler/fryer chicken (3-1/2 to 4 pounds), cut up and skin removed
Salt and pepper to taste
4 sheets heavy-duty aluminum foil (18 inches x 12 inches)

Steps:

  • In a saucepan, combine the first eight ingredients; bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes. Place 2 pieces of chicken in the center of each piece of foil; fold up edges to hold sauce. Sprinkle chicken with salt and pepper. Spoon sauce over chicken. Bring opposite long edges of foil together over the top and fold down several times. Fold the short ends toward the chicken and crimp tightly to prevent leaks. , Place packets on a baking sheet. Bake at 350° for 1 hour. Carefully open packets and turn down foil. Broil chicken for 5 minutes or until browned.

4 boneless skinless chicken breasts, cut in 1-inch pieces
2 cups barbecue sauce
2 cups drained pineapple tidbits
1 red bell pepper, diced
1 small red onion, diced

Steps:

  • Heat oven to 375°F. Cut 4 large sheets of foil; arrange singly on flat surface.
  • In medium bowl, toss together 4 boneless skinless chicken breasts, cut in 1-inch pieces, and 2 cups barbecue sauce until chicken is fully coated.
  • Divide chicken pieces evenly among sheets of foil. Divide 2 cups drained pineapple tidbits, 1 bell pepper, diced, and 1 small red onion, diced, evenly over chicken on foil sheets.
  • Bring up 2 sides of foil over chicken so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space on sides for heat circulation and expansion. Fold other sides to seal.
  • Bake 35 to 40 minutes or until juice of chicken is clear when center of thickest part is cut (at least 165°F). To grill, place foil packs on preheated grill. Cook 10 minutes. Turn packs over; cook 10 to 15 minutes longer or until juice of chicken is clear when center of thickest part is cut (at least 165°F).
