1 package frozen shoestring French fries
1/2 (16 oz.) container pulled pork
1 c. Shredded Colby Jack
1 plum tomato, diced
1/2 white onion, diced
1 Bunch Green onions, chopped
1 jar barbecue sauce, for drizzling

Steps:

  • Preheat oven according to French fry package instructions and cook French fries for the minimum time indicated. Remove from oven and use a spatula to flip the fries, so the crispy side is now facing down. Cover fries with pulled pork, cheese, tomato, onion and green onions. Return to oven and bake until cheese has melted, about 10 minutes. Top with additional barbecue sauce, if desired.

4 medium potatoes
4 teaspoon(s) salt free cajun seasoning
1 pound(s) ground beef
1/2 cup(s) barbecue sauce
2 cup(s) shredded cheddar cheese

Steps:

  • Preheat oven to 400 degrees. Oil baking sheet or use a silicone mat.
  • Cut each potato into 8 wedges. Arrange on tray. Sprinkle on seasoning. Bake 20-25 minutes until cooked through.
  • Brown ground beef and drain fat. Stir in barbecue sauce. Cook until bubbly, about 5 minutes.
  • Pour meat sauce over wedges and top with cheese. Bake 5 minutes or until cheese is melted.
