Beer-Battered Potato Wedges Recipe: How to Make It image

Serve these wonderful wedges just about anytime. These potatoes are really good with hamburgers. They're just like the ones served in restaurants. —Pat Miller, Lynnville, Tennessee

4 medium baking potatoes
1 cup all-purpose flour
1/4 cup milk
1 egg
1 tablespoon seasoned salt
1 tablespoon canola oil
1/2 teaspoon pepper
1/2 cup beer or nonalcoholic beer
Oil for deep-fat frying
Sour cream, optional

Steps:

  • Scrub and pierce potatoes. Microwave, uncovered, on high for 10-12 minutes or just until tender, turning once. , Meanwhile, in a shallow bowl, whisk the flour, milk, egg, seasoned salt, oil and pepper until smooth. Stir in beer; set aside. , When potatoes are cool enough to handle, cut each into 12 wedges. In an electric skillet or deep-fat fryer, heat oil to 375°. Dip potato wedges into batter. Fry in batches for 3-4 minutes or until golden brown, turning occasionally. Drain on paper towels. Serve with sour cream if desired.

I was at work early one day and got bored and hungry, so I thought I would try to make up a new recipe for fried potato wedges. It turned out so good, I gave the recipe to the restaurant I currently work at.

Cook Time 3 minutes

Number Of Ingredients 14

2 medium potatoes (uncooked)
vegetable oil (for frying)
4 1/2 cups buttermilk
1 large egg
3 tablespoons chicken base
1 tablespoon dry mustard
3/4 teaspoon salt
3/4 teaspoon black pepper
3 cups all-purpose flour
1/4 cup salt
1/4 cup garlic powder
1 tablespoon sage
1/2 tablespoon cayenne pepper
1/2 tablespoon black pepper

Steps:

  • Preheat oil to 350ºF.
  • Mix batter mixture until smooth.
  • Cut each uncooked potato into 8 wedges, and soak in batter mixture for at least 20 minutes.
  • Roll potato wedges in flour mixture, put them back in batter mixture, then flour again.
  • Fry wedges for 3½ minutes or until golden brown.
