3 large, organic egg whites
175g white caster sugar
½ tsp vanilla extract

Steps:

  • Preheat the oven to 140°C/fan120°C/gas 1. In a large, grease-free mixing bowl, whisk the egg whites to soft peaks. While continuously whisking, slowly add the caster sugar – 1 tbsp at a time – until you have a stiff, glossy meringue mixture. Whisk in the vanilla extract until combined.
  • Line a baking tray with baking paper, fixing it in place with a tiny blob of meringue in each corner (we have a /basic-meringue-video/short video showing this technique). Using a metal spoon, place 6 craggy dollops of meringue on the baking paper, well spaced apart.
  • Bake for 1¼ hours for mallowy centres, or 1½ hours if you prefer crisper meringues. Peel off the baking paper, then transfer the mallowy meringues to a wire rack to cool, or leave the crisp ones in the turned-off oven for at least 4 hours to cool slowly, then transfer to a wire rack.

Number Of Ingredients 5

1 cup granulated sugar
4 large egg whites, at room temperature
¼ teaspoon cream of tartar
⅛ teaspoon fine sea salt
¼ teaspoon vanilla extract

Steps:

  • Place sugar and ⅓ cup water in a small saucepan. Cook over medium-low, swirling pan occasionally, until sugar is dissolved and syrup registers 240°F on an instant-read thermometer, 10 to 14 minutes.
  • Meanwhile, after about 7 minutes of cooking sugar syrup, beat egg whites with a stand mixer fitted with a whisk attachment on medium speed until foamy, about 30 seconds. Add cream of tartar and salt. Beat until soft peaks form, 1 to 2 minutes.
  • With mixer running on medium speed, gradually stream hot sugar syrup into whipped egg white mixture. Continue beating until meringue is glossy and forms stiff peaks and the outside of mixer bowl has cooled slightly, 3 to 5 minutes. Reduce speed to low, and beat in vanilla extract. Proceed with desired baked meringue recipe.
