Basa (Swai) Fish in Coconut Sauce Recipe | Allrecipes image

Basa is a mild white fish. This recipe is very quick to make. I serve it with a side of coconut rice to use up the rest of the coconut milk in the can and the fish is done before the rice finishes cooking.

¾ cup coconut milk
2 cloves garlic, minced
2 teaspoons soy sauce
¼ teaspoon salt
? teaspoon hot sauce
.063 teaspoon ground black pepper
4 (4 ounce) fillets swai fish, cut into 3-inch pieces
1 tablespoon cornstarch
1 tablespoon cold water

Steps:

  • Mix coconut milk, garlic, soy sauce, salt, hot sauce, and black pepper together in a large skillet or wok; add swai fish. Cook over medium-high heat until fish flakes easily with a fork, about 10 minutes.
  • Stir cornstarch and cold water together in a bowl; mix into fish mixture and cook until sauce is thickened, 2 to 3 minutes.

about 2 small fish per person
fresh dill
salt/pepper
lemon juice
streaky bacon - 1 slice per fish
oil

Steps:

  • Take a sharp knife and cut the fish open on the belly side and remove the inside. Wash and clean the inside of the fish and stuff with a little fresh dill. Repeat with all the other fish. Season with salt and pepper and wrap the streaky bacon around the fish - around the belly area.
  • Heat the grill and lightly oil. Lay your fish on the grill and let it cook for about 6 minutes. Turn over and do the same. If the fish is stuck to the grill, wait a few seconds and try again. Try and not fiddle with the fish, it will break especially if they are small like these little mullets. While grilling squeeze a little lemon juice over the fish.
  • Serve a stack of these babies on a platter in the middle of the table and see how your guests tuck in.
