This barley soup is just the ticket when it is in the middle of winter and the snow is blowing. I used deer venison for the stew meat. Using a instapot or Ninja foodie make the soup quick and easy to make and making a loaf of rustic bread in the morning will top off this meal.

Number Of Ingredients 16

1 pound(s) stew meat, beef or venison
salt and pepper to taste
1 teaspoon(s) garlic powder
4 slice(s) bacon, chopped small
2 tablespoon(s) olive oil
2 tablespoon(s) butter
2 tablespoon(s) better than bouillon, roast beef
1/2 cup(s) celery,chopped
1/2 cup(s) onion, chopped
1 bay leaf
sprinkle thyme or rosemary
3/4 cup(s) pearl barley , washed
3 carrots, chopped
4 to 5 cup(s) water
splash worcestershire sauce
1 cup(s) mushrooms (0ption)

Steps:

  • Cut stew meat into bite size pieces, toss in flour and add to instapot or ninja foodie and set to sear. Brown about halfway, sprinkle with garlic powder and sat and pepper then add the chopped bacon. When browned, add 1 cup of water and stir to remove all the bits of brown bits off the bottom of pot. The bottom of pot should be clear of any bits before next step.
  • Add all the rest of the ingredients except the mushrooms. Put on the pressure lid and pick the pressure button (or manual) and set for 30 minutes.
  • When time is up you can either use normal release or quick release depending on what time you want the soup ready to serve.
  • open pressure cooker and remove bay leaf and add mushrooms if desired. You should do a taste test and add extra salt and pepper to taste.
  • to reheat the next day add more water as this soup will thicken as it cools.
  • serve with rustic bread

"Krupnik z Hrybami i Miasam" - from the Grealitvanian (Belarusian) cookbook, published by the American-Belarusian Women's Society. Belarusian cuisine has much in common with that of other countries in the region. This hearty soup is sure to please. I've expanded a bit on the instructions, based on my experience with these ingredients.

1/2 cup pearl barley
1/2 lb fresh mushrooms or 1/4 cup dried mushroom
1 small onion, chopped
1 tablespoon butter
1 lb beef (plate)
1/2 cup sour cream
salt

Steps:

  • Wash barley in hot water and soak overnight in two cups of water.
  • If using dried mushrooms, wash, break up any large pieces, and cover with two cups of hot water, soaking for at least two hours, and overnight if you can.
  • Drain the barley, put in pot, and cover with four cups fresh water.
  • Drain the mushrooms, saving the soaking liquid .If using fresh mushrooms, slice.
  • Melt butter in the saucepan, add the onion and mushrooms and saute until the onion is soft, about 10 minutes.
  • Add all of this to the pot, along with the meat and some salt. Bring to a boil, reduce to a simmer, and cook until the barley is soft and the meat is done, about 1 hour. I would add the mushroom soaking liquid - you need to make sure you don't pour in the grit that settles to the bottom. Watch the pot, as you may need additional water, especially if you used fresh mushrooms and don't have the soaking liquid.
  • Remove the beef, cube, and return to the pot.
  • Remove from the heat and stir in the sour cream, if desired. Taste for salt.
  • Note: The recipe does not call for it, but I would add one or two bay leaves, and 4 or 5 whole peppercorns or some ground black pepper to any soup of this type.

  • "In a large stock pot, add the olive oil to the pot and bring the heat to medium high. Add the onion and garlic and saute' with rosemary sprig, bay leaves, and basil for 2-4 minutes. Add the butter, then the rest of the vegetables. Cook for 8-10 minutes, stirring occasionally. Once your vegetables have softened, add the tomato paste along with the grated horseradish and then season with salt and pepper. Stir until the paste is evenly distributed throughout the soup, stirring until it turns a deep red color. (about 3 minutes). Add the red wine and stir into the vegetable base, removing any sticking vegetables from the bottom of the stock pot. Cook for about 3 minutes, reducing the wine by at least half. When the soup has simmered for about 70-75 minutes, and the barley has cooked, combine the barley and broth with the soup. Stir, cover and simmer for an additional 10-12 minutes or until the barley is tender. Remove the soup from the heat. Stir in the red wine vinegar and serve immediately. Garnish with additional chopped basil or parsley. "
