Number Of Ingredients 10

3 tablespoons olive oil
2 tablespoons fresh orange juice
2 tablespoons fresh lemon juice
½ tablespoon orange zest
½ tablespoon lemon zest
2 cups cooked barley
2 cups parsley leaves
1 cup walnuts, toasted and chopped
? cup dried cranberries, chopped
4 large scallions, thinly sliced

Steps:

  • In bowl, whisk oil, juices and zests. Toss with remaining ingredients; season.

2 ribs celery, finely chopped
1/3 c. crumbled reduced-fat feta cheese
1/4 c. finely chopped red onion
1/4 c. dried cranberries
2 tbsp. fresh lemon juice
2 tbsp. chopped fresh mint
1 tbsp. walnut oil
1/4 tsp. salt
1/4 tsp. freshly ground black pepper

Steps:

  • Stir in the celery, cheese, onion, cranberries, lemon juice, mint, oil, salt, and pepper and toss well. Serve immediately or refrigerate until ready to serve. If refrigerating, stir well before serving.
