1 large onion, chopped
1 cup sliced fresh mushrooms
2 tablespoons butter
3 cups water
1 tablespoon chicken bouillon granules
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup medium pearl barley
1 tablespoon minced fresh parsley

Steps:

  • In a saucepan, saute onion and mushrooms in butter until tender. Add water, bouillon, salt and pepper; mix well. bring to a boil. Add barley and parsley. Pour into a greased 2-qt. baking dish. Cover and bake at 350° for 80-90 minutes or until the barley is tender.

2 medium onions, chopped
2 tablespoons butter or 2 tablespoons margarine
3 1/4 cups boiling water
1 cup barley
2 teaspoons instant chicken bouillon
1/2 teaspoon salt
1 dash pepper

Steps:

  • Pre-heat oven to 375° F.
  • Cook and stir mushrooms and onions in butter 5 minutes.
  • Place in ungreased 1 1/2-quart casserole.
  • Stir in remaining ingredients. Cover and bake at 375° F, stirring once, until barley is tender, about 1 1/4 hours.

  • Preheat oven to 350 degrees. Melt butter in a large skillet over medium high heat. Add the onions, carrot, celery, mushrooms, barley, thyme (if using it) and saute, stirring frequently, until the mushrooms begin to brown and the barley starts to toast, about 10 minutes. Add salt and pepper after mushrooms have browned. Place mixture into a shallow 2 1/2 quart baking dish (like a 10 by 10 Corning Ware casserole) and pour in the hot stock. Cover tightly and bake 60 to 75 minutes, or until all the liquid is absorbed. Be careful of the steam when removing the top. The barley should have a slightly crunchy texture when done. If it’s too hard after all the stock has been absorbed, add some boiling stock or water and cook another 10 to 15 minutes.
