Southern Grilled Barbecued Ribs Recipe | Allrecipes image

These ribs will have the smoky flavor without all the grilling time. It takes just 30 minutes on the grill to give the ribs that smoky flavor Southerners expect. You can use this recipe for spare ribs too, just bake for 15 minutes longer.

4 pounds baby back pork ribs
? cup water
? cup red wine vinegar
1 cup ketchup
1 cup water
½ cup cider vinegar
? cup Worcestershire sauce
¼ cup prepared mustard
4 tablespoons butter
½ cup packed brown sugar
1 teaspoon hot pepper sauce
? teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place ribs in two 10x15 inch roasting pans. Pour water and red wine vinegar into a bowl, and stir. Pour diluted vinegar over ribs and cover with foil. Bake in the preheated oven for 45 minutes. Baste the ribs with their juices halfway through cooking.
  • In a medium saucepan, mix together ketchup, water, vinegar, Worcestershire sauce, mustard, butter, brown sugar, hot pepper sauce, and salt; bring to a boil. Reduce heat to low, cover, and simmer barbeque sauce for 1 hour.
  • Preheat grill for medium heat.
  • Lightly oil preheated grill. Transfer ribs from the oven to the grill, discarding cooking liquid. Grill over medium heat for 15 minutes, turning ribs once. Baste ribs generously with barbeque sauce, and grill 8 minutes. Turn ribs, baste again with barbeque sauce, and grill 8 minutes.

Grilled BBQ ribs might sound intimidating, but they're actually so easy to make. There's no pre-cooking required and they come out smoky and flavorful every time.

racks baby back ribs (about 5 to 6 pounds total)

3 tbsp.

vegetable oil, plus more for oiling the grates

1/2 c.

chicken stock

1/4 c.

apple cider vinegar

1 1/2 c.

BBQ sauce

Steps:

  • Preheat a grill (charcoal or gas) to 300°, with the coals or flames only under one half of the grill. For the spice rub: In a small bowl, mix the brown sugar, smoked paprika, onion powder, garlic powder, salt, black pepper and cayenne (if using) to combine. Place the rack of ribs on a large sheet tray and remove the membrane from the underside of the ribs. Rub the vegetable oil all over both sides of the ribs, then sprinkle evenly with the spice rub.  Place the ribs on the sheet tray, with the curves of the bones facing down. Add the chicken stock and vinegar to the tray. Wrap the tray tightly with aluminum foil and place on the grill over the side with no coals/flame. Cook over indirect heat until the internal temperature of the ribs reads 180° to 190°, about 80 to 90 minutes. Increase the grill temperature to 375° and oil the grill grates well. Transfer the ribs directly over the grill grates and brush the tops with the BBQ sauce. Cover and cook for 5 minutes. Carefully turn the ribs over and baste the other side with the BBQ sauce. Cover again and cook for an additional 5 minutes. Continue basting and turning the ribs until the BBQ sauce has created a sticky coating and the ribs are charred in spots, 10 to 20 minutes longer.   Transfer the ribs to a cutting board, cut into pieces and serve.

  • Mix meat cure ingredients to dissolve and pour in bag with thawed rack of spare ribs then massage. For vivid red color do not rinse the ribs...it comes from the meat cure reacting with the residual blood. The fresher the meat the more the red. Let ribs stand for exactly 4 hours. Preheat Oven 250F and place foil over baking sheet and set cooking rack on pan. Take cured ribs out of bag and place on rack. I do not rinse mine. You do not have to remove the membrane from the back of the ribs. Sauce the ribs if desired with your favorite sauce and close the lid to smother the remaining charcoals. Keep warm for up to an hour but don't let it burn. If you want crunchy sweet "Barked Ribs" as shown in the picture instead of wet sauced ribs...then mix the Barked Spices and spread it all over the ribs 15 minutes before they are finished...spritz with the apple juice..and heat through to toast the sugar. Use remaining unused seasoning to garnish Ribs, Cole's Slaw, French Fries, Mac 'n Cheese ect, or pour it into the remaining tomato sauce and attack a few burgers with it. Do not put TenderQuick powder on dry..always dissolve it...and do not exceed the measured amount listed.
