Great baked beans for a cookout! Reduce the brown sugar if you want your beans less sweet. This is from the Chicago Tribune Food Guide. Prep time includes bean soaking time.

1 lb dried small white lima beans
1/2 lb bacon or 1/2 lb salt pork, chopped,cooked crisp and drained
1 (14 1/2 ounce) can tomato soup
1 large onion, chopped
1 green bell pepper, chopped
1 cup packed brown sugar
1/4 cup ketchup
1 tablespoon dry mustard
1 tablespoon Worcestershire sauce

Steps:

  • Wash beans; sort.
  • Soak beans in water to cover in a large bowl 8-12 hours.
  • Transfer beans and soaking water to a large saucepan.
  • Heat to boil over medium-high heat.
  • Reduce heat to medium-low; simmer 1 hour.
  • Drain.
  • Heat oven to 350°F.
  • Combine beans, bacon, tomato soup, onion, bell pepper, brown sugar, ketchup, mustard, and Worcestershire saucen a large bowl; mix well.
  • Transfer mixture to a 13" x 9" baking pan.
  • Bake until hot and bubbly, about 1 hour.

Try these for a break from your regular baked beans. These beans always go over well at our summer cookouts and bbq's. If they are too sweet for your taste, you could add a teaspoon of dijon mustard. Preparation time includes allowing the beans to stand for an hour.

1 lb dried lima beans
6 cups water
1 1/2 cups onions, chopped
1 teaspoon salt
1 cup ketchup
3/4 cup brown sugar, packed
1/3 cup pancake syrup
1/4 teaspoon hot pepper sauce
4 slices bacon, cooked and crumbled

Steps:

  • Place beans in a large saucepan; add water to cover by 2 inches
  • Bring to a boil; boil for 2 minutes.
  • Remove from the heat; cover and let stand for 1 hour.
  • Drain and rinse beans, discarding water.
  • Return beans to the saucepan.
  • Add 6 cups water, onions and salt; mix well.
  • Bring to a boil.
  • Reduce heat; cover and simmer for 1-1/2 to 1-3/4 hours or until beans are tender.
  • Drain and discard liquid.
  • Stir in the ketchup, brown sugar, syrup, hot pepper sauce and bacon. Transfer to an ungreased 2-qt. baking dish or bean pot.
  • Cover and bake at 350 degrees for 30 minutes.
  • Uncover and bake 30 minutes longer or until bubbly.

  • Line four 8x8-inch baking pans with heat-resistant freezer wrap. Allow sufficient extra wrap to fold over top. Use one pan for each six servings or possibly one-fourth of the recipe. Don't line pans for food to be served without freezing. Add in beans to boiling water; return to boiling. Boil beans 2 min; then soak beans 1 hour (or possibly overnight, if preferred). Cook beans slowly till tender, about 45 min. Drain; save 2 c. cooking liquid. Brown salt pork with onion. Mix remaining ingredients with salt pork mix. Add in beans; stir gently. Pour one-fourth of mix into each baking pan. TO SERVE WITHOUT FREEZING Preheat oven to 400 F. (warm). Bake 30 min. TO FREEZE Cold for 30 min at room temperature. Complete wrapping by pulling paper up over top of food. Put edges of wrap together and fold several times so paper lies directly on top of food. Fold ends of freezer wrap over the top and seal with freezer tape. Label with name of food, date of freezing, and last date the food should be used for best eating quality (about 6 months). Freeze immediately for 10 to 12 hrs before removing pkgs. from the pans. TO HEAT Frzn FOOD Preheat oven to 400 F. (warm). Remove freezer wrap. Place food in baking pan. Bake 1 hour or possibly till center is warm. NOTES :This recipe is for 24 servings (about 1/2 c. each). Directions aregiven for dividing the prepared food into four parts of six servings each. One part may be completely cooked and served at the time of preparation. The remaining parts may be frzn.
