Meatballs in Barbecue Sauce Recipe: How to Make It image

This recipe came from my home ec teacher in high school. I enjoy making it because you can throw it in the oven and still have time to do other things.—Yvonne Nave, Lyons, Kansas

1 large egg, lightly beaten
1 can (5 ounces) evaporated milk
1 cup quick-cooking oats
1/2 cup finely chopped onion
1 teaspoon salt
1 teaspoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1-1/2 pounds ground beef
SAUCE:
1 cup ketchup
3/4 cup packed brown sugar
1/4 cup chopped onion
1/2 teaspoon Liquid Smoke, optional
1/4 teaspoon garlic powder

Steps:

  • In a large bowl, combine the first eight ingredients. Crumble beef over mixture and mix well. Shape into 1-in. balls. , Place meatballs on a greased rack in a shallow baking pan. Bake, uncovered, at 350° for 18-20 minutes or until meat is no longer pink; drain. , Meanwhile, combine the sauce ingredients in a saucepan. Bring to a boil. Reduce heat and simmer for 2 minutes, stirring frequently. Pour over meatballs. Bake 10-12 minutes longer.

Tart cranberry-orange and zesty barbecue sauces coat tasty homemade meatballs that are conveniently kept warm in a slow cooker.

1 lb lean (at least 80%) ground beef
1/2 lb ground pork
1 medium onion, finely chopped (1/2 cup)
1/4 cup Progresso™ plain bread crumbs
1/2 teaspoon ground mustard
1/2 teaspoon seasoned salt
1/8 teaspoon pepper
1 egg
1 cup barbecue sauce
1/2 cup cranberry-orange sauce (from 9.2-oz jar)
1/2 teaspoon ground mustard
1/2 teaspoon ground ginger
1/2 teaspoon salt
2 tablespoons chopped fresh parsley

Steps:

  • Heat oven to 375°F. Spray 15x10x1-inch pan with cooking spray. In large bowl, mix all meatball ingredients. Shape into 1-inch meatballs. Place in pan. Bake 15 to 20 minutes or until no longer pink in center and juice is clear.
  • In 2- to 2 1/2-quart slow cooker, mix all sauce ingredients except parsley until well blended. Add meatballs.
  • Cover and cook on Low heat setting 2 to 3 hours or until thoroughly heated. Stir in parsley. Serve meatballs with cocktail forks or toothpicks. Meatballs will hold on Low heat setting up to 2 hours; stir occasionally.

Before you use herbs as a main ingredient — it helps to know which ones work on a grand scale. Parsley, obviously, works in abundance: it’s clean-tasting, pleasantly grassy and almost never overwhelming. You can add literally a bunch (bunches!) of it to salad, soup, eggs, pasta, grains or beans. The same is largely true of basil, and you can use other mild herbs — chervil, chives, cilantro, dill, shiso — by at least the handful.
