Cook Bang Bang Chicken in 20 mins - Simply Cook image

A brightly coloured dish featuring tender chicken and crunchy bell peppers with wok-tossed noodles in a coconutty peanut sauce. Red chilli, coriander and a squeeze of lime juice bring it all to life and put the “bang” into the dish! We've kept it to a zingy but enjoyable heat level for all. Feel free to add some extra chopped chillies on top for aesthetics and more spiciness, if desired!

2 chicken fillets
2 peppers (1 red, 1 green)
2tbsps crunchy peanut butter
200ml coconut milk
150g dried medium noodles
2 spring onions
1 lime
sesame seeds

Steps:

  • Fry the chickenHeat a little oil in a wide frying pan and fry the chicken for 2 mins.Stir in the BANG BANG PASTE, then add the peppers and fry for 2 more mins.Mix in the coconut milk and bring it to a gentle boil and then reduce the heat to a simmer. 
  • Develop the flavoursAdd the GARLIC & COCONUT PASTE and peanut butter and mix well.Add the spring onions (if using) and cook for 2 mins, or until the chicken is done, then turn off the heat. 
  • Cook the noodlesBoil the noodles as per pack instructions.Collect a 2 tbsp of water from the noodle pan with a mug, then drain and rinse them under cold water.Stir the CHILLI GARNISH into the chicken pan, then add the noodles and 1-2 tbsps (or more, if necessary to loosen the sauce) of your reserved noodle water and toss to coat them. (Tongs are helpful here.) 
  • Serve! Serve the noodles with squeeze of a lime and some sesame seeds sprinkled over (if using).

Bangin Good Shrimp- A healthier, slimmed down copycat recipe of Bonefish Grill's very popular Bang Bang shrimp recipe.

Number Of Ingredients 9

5 tbsp light mayonnaise
3 tbsp Thai Sweet Chili Sauce
1 tsp Sriracha
1 lb large shrimp (shelled and deveined (weight after peeled))
2 tsp cornstarch
1 tsp canola oil
3 cups shredded iceberg lettuce (or butter lettuce)
1 cup shredded purple cabbage
4 tbsp scallions (chopped)

Steps:

  • In a medium bowl, combine mayonnaise, Thai sweet chili sauce and Sriracha. Set aside.
  • Combine lettuce and cabbage and divide between four plates. Set aside.
  • Coat shrimp with cornstarch, mixing well with your hands.
  • Heat a large skillet or wok on high heat, when hot add oil. When oil is hot add the shrimp to hot pan and cook tossing a few times until cooked through, about 3 minutes.
  • Remove from pan and combine with the sauce coating well.
  • Place shrimp on lettuce and top with scallions.

    1. Preheat your oven to full whack. Put the dried chillies, raisins and apple juice in a bowl, then set aside.
    2. Put the lamb shanks in a roasting tray, then rub all over with oil, sea salt and black pepper. Bang them in the oven for 20 minutes.
    3. As they’re browning, peel and finely chop the onions, peel and finely slice the garlic, then halve and deseed the chillies.
    4. Get a casserole pan that will fit the shanks quite snugly — about 24cm in diameter and 10cm deep. Put it on a medium heat and add a lug of olive oil, the onions, garlic, fresh chilli, smoked paprika, bay leaves and rosemary. Leave to sweat for about 10 minutes.
    5. Once the onions have softened, put the rehydrated chillies and raisins into a food processor or liquidiser, along with any leftover apple juice, then blitz (feel free to sneak in a swig of red wine or bourbon here!) until you’ve got a paste. Stir this into your onions.
    6. Take your shanks out of the oven and turn the temperature down to 140°C/275°F/gas 1.
    7. Add the shanks to the casserole pan along with your tinned tomatoes and stock (if using) or equal amounts of water.
    8. Stir everything together, cover and put in the oven to stew for 2 hours 30 minutes to 3 hours, or until the meat is falling off the bone and the sauce is thick, topping up with water or stock as you go.
    9. Take it out of the oven, have a taste and season with salt and pepper and a dash of vinegar. Serve with steamed greens, mash, flatbreads, or whatever you fancy.
