Ricardo loves waffles so Mon Ami Gabi’s bananas Foster mash-up got recipe developer Étienne Marquis excited. This is his version of the over-the-top brunch dish at the Paris Las Vegas restaurant.

1 cup (250 ml) 35% whipping cream
2 tbsp (30 g) sugar
1 3/4 cups (265 g) unbleached all-purpose flour
1/4 cup (45 g) corn flour
1 tsp baking powder
1/8 tsp salt
1 1/2 cups (375 ml) milk
1/4 cup (60 ml) canola oil
1 tsp (5 ml) vanilla extract
2 eggs
1/4 cup (55 g) lightly packed brown sugar
3 bananas, ripe but firm
1 1/2 cups (165 g) lightly packed brown sugar
1/4 cup (55 g) butter
2 tbsp (30 ml) water
3/4 cup (180 ml) dark rum
1/8 tsp ground cinnamon

2 c. of Hy-Vee reduced-fat baking mix
1 Hy-Vee large egg
3 tbsp. of Hy-Vee canola oil
1.333 c. of Hy-Vee club soda
0.5 c. of Hy-Vee unsalted butter
0.5 c. of packed Hy-Vee brown sugar
2 medium bananas, peeled and sliced
0 Hy-Vee cinnamon
2 tbsp. of banana rum liquor
0 Hy-Vee English walnuts, optional

Steps:

  • 1. Stir baking mix, egg, canola oil and club soda until combined.
  • 2. Pour about 1/2 cup onto center of hot, greased waffle iron; close lid.
  • 3. Bake until steaming stops; carefully remove waffle. Repeat with remaining batter.
  • 4. In a medium saucepan, melt butter and brown sugar. Stir in sliced bananas and cook until heated through.
  • 5. Remove from heat; sprinkle with cinnamon. Stir in rum.
  • 6. Serve rum sauce over waffles. Sprinkle with additional cinnamon and walnuts, if desired.
