A really good, moist spice cake. Especially good with the Allspice Cream Cheese Frosting.

½ cup butter, softened
1 cup packed light brown sugar
½ cup white sugar
1?¼ teaspoons ground allspice
½ teaspoon ground nutmeg
2 eggs
1?½ teaspoons vanilla extract
1?¼ cups all-purpose flour
¾ cup rolled oats
¾ teaspoon baking soda
¾ teaspoon baking powder
¼ teaspoon salt
? cup sour cream
1 cup mashed bananas

Steps:

Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round cake pans.
Combine flour, oats, baking soda, baking powder and salt in a medium size bowl.
In a large bowl, cream the butter or margarine. Add brown sugar, sugar, allspice and nutmeg; beat until light and fluffy. Mix in eggs and vanilla extract. Add 1/3 of the dry ingredients to the butter mixture; mix well. Add the sour cream; mix well. Add another 1/3 of the dry ingredients; mix well. Add half of the bananas; mix well. Repeat with remaining 1/3 of the dry ingredients and remaining bananas. Pour batter into prepared pans.
Bake until cake tests done, about 30 minutes. Let it cool in the pan for 5 minutes, and then turn onto wire rack to cool. Frost with Allspice Cream Cheese Frosting.

Ingredients

1/2 cup shortening
1 1/2 cups sugar
2 large eggs
1/2 cup milk
3 small ripe bananas
2 cups flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1 1/2 teaspoons cinnamon
1/2 teaspoon clove
1/2 teaspoon allspice
1 teaspoon salt
4 tablespoons butter, melted
4 teaspoons lemon juice
2 tablespoons hot water
powdered sugar

Steps:

Cream sugar and shortening.
Add the rest of the ingredients and mix well.
Pour into a greased 9 x 13 pan and bake at 375° for 25- 30 min or until a toothpick inserted into the middle comes out clean. Spread the glaze over the top while still hot.
Glaze.
Mix butter, water, and lemon juice well. Add enough powdered sugar to make thin glaze(a little thicker than gravy).

In another bowl, combine the milk, orange juice concentrate, yogurt, orange zest and vanilla. Gradually add dry ingredients to banana mixture alternately with milk mixture., In another bowl, eat egg whites and cream of tartar until soft peaks form. Gradually add remaining sugar, beating until stiff peaks form. Fold in batter. Pour into a greased and floured 10-in. fluted tube pan. Bake at 350° for 48-52 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack., Combine the glaze ingredients; drizzle over cooled cake.
