Delicious Raisin Nut Banana Bread Recipe | Allrecipes image

The softest combination of unlikely ingredients is great! I like to use raisin nut bran with delicious nut covered raisins. Enjoy!

2 cups raisin nut bran cereal
½ cup milk
1?½ cups all-purpose flour
3?½ teaspoons baking powder
1 teaspoon baking soda
¼ teaspoon salt
1 cup mashed ripe banana
½ cup white sugar
¼ cup brown sugar
¼ cup vegetable oil
1 egg

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease the bottom of a 9x5 inch loaf pan.
  • In a bowl, combine the raisin nut bran cereal and milk; let stand for 5 minutes.
  • In a large bowl, sift together flour, baking powder, baking soda and salt. In a separate bowl, beat together mashed banana, sugar, brown sugar, vegetable oil and egg. Combine the cereal and banana mixtures. Stir in the flour mixture just until combined. Pour batter into prepared pan.
  • Bake in preheated oven for 50 to 55 minutes, until a toothpick inserted into center of loaf comes out clean. Let cool before slicing.

2/3 cup Sugar
2 teaspoons cinnamon
2 teaspoons baking powder
1/2 teaspoons baking soda
1/4 teaspoon Salt
1 2-3 bananas ripe
1/3 cup butter or margarine
2 tablespoons milk
2 Eggs
1/2 cup Nuts chopped
1/2 cup raisins

Steps:

  • "Pre-heat oven to 350 In a mixer, combine: flour, sugar, cinnamon, baking powder, baking soda and salt. Add bananas, margarine and milk. Beat with an electric mixer until blended then on high for 2 mins. Add eggs until blended. Stir in nuts and raisins. Pour batter into a greased/floured loaf pan. Bake for 55-60 mins or until toothpick is clean. Cool on a wire rack and wrap in saran wrap for a few hours before slicing. I serve with cream cheese :)"

I found this recipe on allrecipes.com and wanted to post it here for safe keeping. This is the best thing that has ever come out of my bread machine! A light fluffy tasty bread that my family gobbled up and asked for more! Remove your predetermined ideas of banana bread and try this yeast bread, the banana flavor is very subtle, but I think it adds to the nice texture. I am posting the recipe as I found it, but be warned I had to reduce the amount of yeast I used because when i used it with the full 2 1/2 teaspoons the dough spilled over the top of my ABM. I had better results with 2 tsp.

I got this recipe when I was 12 and have used it for the past 33 years and haven't found one better! My son used it when he was 12 at the California State Fair and won a first place ribbon with it. It is just simply delicious & moist. I either make a loaf or put it into muffin cups & make muffins for my kids to grab in the morning on their way to school. Using margarine makes the muffins come out in a better form, but the butter has a better flavor, so I usually use 1/2 of each to get the best of both worlds.

I adjusted the time because people had been saying it was over baking, now people are saying it's under baked.
