BANANA BREAD RECIPE FOR 4 BANANAS - BEAT BAKE EAT
This quick and easy banana bread recipe made with 4 bananas and oil is moist and delicious. Only one bowl required, no mixer needed and less than 10 minutes prep! This is one of the best ways to use overripe bananas.

Steps:
- Preheat oven to 350°F. Spray a 9x5 inch bread pan with non-stick cooking spray, grease with oil or line with parchment paper and set aside.
- In a large bowl combine bananas, sugar, cinnamon, and salt.
- Beat in the oil, eggs, and vanilla extract.
- Add the flour and baking soda and gently mix until incorporated. DO NOT over mix.
- Pour the batter into the bread pan.
- Bake for 30 minutes, remove from the oven and cover loosely with foil, then continue to bake for 20 – 25 minutes until a toothpick inserted in the center comes out clean.*This method prevents the crust from burning.
- Cool in pan 15 minutes then remove to cool completely.

Steps:
- Preheat oven to 350°F. Line muffin pan with muffins liners (or spray with nonstick cooking spray) and set aside.
- In a large bowl combine the bananas, eggs and oil/butter until mixture is smooth.
- Add the cake mix and gently mix until combined. DO NOT over mix.
- Scoop batter into the muffin pan filling the cups 3/4 of the way full.
- Bake for 18 - 20 minutes until a toothpick inserted comes out with a few moist crumbs (not wet batter!).
- Cool in pan 10 minutes then remove.

- Pre-heat the oven. Rub some of the butter around the inside of a 1kg/2lb loaf tin or insert a baking liner. Chop the butter into small cubes. Put the butter cubes and sugar into a mixing bowl and beat until pale and creamy. Beat in the vanilla extract. Break the eggs into the bowl, one a time, beating well between each. Add half the flour to the bowl and beat well. Mash the bananas, add these to the bowl and beat again. Add the remaining flour to the bowl and mix it in. Tip the mixture into the prepared tin and smooth the top. Bake for 55–60 minutes. Leave the cake to cool in the tin for 20 minutes then turn it out onto a wire rack to cool.
