CHOCOLATE CHIP BANANA BREAD RECIPE - RACHAEL RAY

This is a classic banana bread – moist and full of chocolate chips! This recipe is one of my family's favorites that I make on a sometimes weekly basis. I am the only regular banana eater in the house (besides my dog - he can hear me peeling a banana from the opposite end of the house and comes running) but keep buying them every week because my kids request the banana bread. A great way to use your overripe bananas, this loaf makes a great hostess gift, plus it freezes well tightly wrapped in foil the freezer for up to 3 months.

Number Of Ingredients 1

  • 1/4 cup vegetable oil

  • 1 1/2 cups flour

  • 1 cup sugar

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 2 eggs, lightly beaten

  • 3 bananas, mashed (1 cup mashed banana)

  • 1 cup chocolate chips

Steps:

  • Pre-heat the oven to 350°F.Grease and flour a 8 1/2-inch x 4 1/2-inch loaf pan (or use baking spray).In a large bowl, whisk together the flour, sugar, baking soda, and salt. Mix in the oil, bananas, and eggs. Stir in the chocolate chips (do not over-mix!) and pour into the prepared pan. Bake until a toothpick inserted in the center comes out clean, about 60-80 minutes. Cool the loaf in the pan for 10 minutes, then turn out and cool completely, right side up.Got more bananas to use up? 4 cloves garlic, crushed
2 tablespoons butter
2 tablespoons extra-virgin olive oil
1 loaf crusty bread, split
3 tablespoons grated cheese, Parmigiano or Romano, optional
Chopped fresh parsley

Steps:

  • Combine garlic, butter, and oil in a microwave safe dish or in a small saucepan. Heat garlic and butter and oil in microwave for 1 minute or in a small pot over moderate-low heat for 3 minutes.
  • Toast split bread under broiler. Remove bread when it is toasted golden brown in color. Brush bread liberally with garlic oil. Sprinkle with cheese, if using, and parsley. If you added cheese, return to broiler and brown 30 seconds. Cut into chunks and serve.

I recently posted a recipe for Peanut Butter Chocolate Chip Banana Bread and someone posted a comment asking about how many calories are in a serving. I did some investigating on the Internet and discovered there are many different sites that allow you to track daily calories by allowing you to keep a food log (I like Lose It!, an app on my iPhone) and some sites that allow you to log in recipe ingredients and number of servings and the site calculates the per serving calorie count and nutritional content. The easiest site for me to use was http://caloriecount.about.com/cc/recipe_analysis.php. Many sites require you to search for each recipe ingredient one at a time in their database, which can be somewhat time consuming. On the Calorie Counter website, you just copy and paste the ingredients from your recipe, insert the number of servings, and the recipe is "analyzed" for you. You can also store recipes on the site, and it's free. By the way, here is the nutritional info for my Peanut Butter Chocolate Chip Banana Bread (based on 16 servings per loaf) - not too bad as far as calories, but it got a D+ grade as far as nutritional content. Don't bananas, whole wheat flour and yogurt count for something?
