Reduced-Calorie Banana Bread | Better Homes & Gardens image

Stick with this moist and tender variation of a favorite quick bread. It's lower in calories, fat, and cholesterol than the traditional version of banana bread.

1?½ cups all-purpose flour
1?¼ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
? teaspoon salt
2 slightly beaten egg whites
1 cup mashed banana
¾ cup sugar
¼ cup cooking oil
Nonstick cooking spray

Steps:

  • In a medium mixing bowl stir together flour, baking powder, baking soda, cinnamon, and salt.
  • In a large mixing bowl stir together egg whites, banana, sugar, and oil. Stir flour mixture into banana mixture just until moistened.
  • Spray an 8x4x2-inch loaf pan with nonstick cooking spray. Spread batter in prepared pan. Bake in a 350 degree F oven for 45 to 50 minutes or until a toothpick inserted near the center comes out clean.
  • Cool bread in the pan for 10 minutes. Remove from pan and cool thoroughly on a wire rack. For easier slicing, wrap the bread in plastic wrap and store overnight. Makes 1 loaf (16 servings).

½ cup butter
1 cup white sugar
2 eggs
3 ripe bananas, mashed
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition, stir in the mashed bananas.
  • In a large bowl, sift together flour, baking powder, baking soda, salt. Blend the banana mixture into the flour mixture; stirring just to combine. Fold in the nuts.
  • Bake in preheated oven for 60 minutes, until a toothpick inserted into center of the loaf comes out clean.
