These are a big hit for snack days at work. Very moist and easy to make.

½ cup butter, softened
1?½ cups white sugar
2 eggs
1 cup sour cream
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
1 cup mashed ripe bananas
1 (16 ounce) container cream cheese frosting

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 10x15 inch jellyroll pan.
  • In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs, one at a time, then stir in the sour cream and vanilla. Combine the flour, baking soda and salt; stir into the batter. Finally, mix in the mashed banana. Spread evenly into the prepared pan.
  • Bake for 20 to 25 minutes in the preheated oven, until a toothpick inserted into the center comes out clean. Allow bars to cool completely before frosting with the cream cheese frosting.

Have this recipe as a cake but I always make it into bars instead. cupcakes would be good too.

3 cup(s) all purpose flour
2 cup(s) sugar
1 teaspoon(s) baking soda
1/2 teaspoon(s) cinnamon ( the origional recipe calls for 1 tsp but i find that was to much for my liking)
1/2 teaspoon(s) salt
3 - eggs, beaten
3/4 cup(s) vegetable oil
4 large ripe banana, mashed
1 cup(s) chopped pecans
1 1/2 teaspoon(s) vanilla
CREAM CHEESE FROSTING
8 ounce(s) package cream cheese, softened
1/2 cup(s) butter, softened
3 1/2 cup(s) powdered sugar
1/2 cup(s) chopped pecans

Steps:

  • preheat oven to 350 degrees. Butter and flour desired pan or pans. I use a bar pan. or you can use a 9x13 if you want a cake, or round pans or cupcake pan.
  • Stir together flour, sugar, soda, cinnamon and salt. Add the eggs and oil. Stir just until the dry ingredents are moistened.Do not beat Stir in bananas, vanilla and pecans
  • pour into prepared pan or pans Bake for 25 to 30 minutes or until toothpic comes out clean. If using round pans, let cool for 10 minutes before turning out onto wire cooling rack. Cool completely before frosting To make frosting, beat butter, cream cheese, powdered sugar and vanilla. Fold in pecans
