1/2 cup teriyaki marinade and sauce
2 tablespoons finely chopped green onions
1 tablespoon oil
1 teaspoon grated gingerroot
1 garlic clove, minced
16 (1-inch) chunks fresh pineapple (about 1/2 pineapple)
1 red bell pepper, seeded, cut into 16 pieces
16 shelled deveined uncooked large shrimp with tails left on

Steps:

  • Soak eight 10 to 14-inch bamboo skewers in water for 30 minutes. In small bowl, combine all marinade ingredients; mix well. Set aside.
  • Alternately thread pineapple, bell pepper and shrimp onto skewers. Brush kabobs with half of marinade; reserve remaining marinade. Cover; refrigerate 20 minutes to marinate.
  • Meanwhile, heat grill. When ready to grill, place kabobs on gas grill over medium heat or on charcoal grill 4 to 6 inches over medium coals. Brush with remaining marinade; cook 8 to 10 minutes or until shrimp turn pink, turning kabobs frequently. Discard any remaining marinade.

1 lb (16 to 20 size) gulf shrimp, peeled and deveined
¼ cup soy sauce
¼ cup sesame oil
¼ cup rice wine vinegar
¼ cup peanut oil
1 Tbsp minced garlic
½ Tbsp minced fresh jalapeno chili
2 Tbsp sugar
Bamboo skewers
1 bunch scallions, cleaned and cut in 2-inch pieces
2 red bell peppers, medium cut

Steps:

  • Whisk marinade ingredients together in a bowl.
  • Place shrimp in a plastic bag with marinade for 1 to 2 hours in refrigerator.
  • Soak bamboo skewers in water for the same amount of time to prevent burning. Using 2 bamboo skewers skewer the prawns alternating with a scallion pieces and pepper pieces so the skewers will lay flat and be easy to flip over.
  • Grill on each side for 2 to 3 minutes. Serve.
