Deep-fried meatballs: a real treat for adults and children image

Deep-fried meatballs are a popular and easy to prepare second course, made with eggs, breadcrumbs, flour and minced meat. When they asked me to create a recipe that would please even those children who suffer of lack of appetite, the first thing I thought was: and what do I know about this kind of children?

Green olives (already pitted), 80gr
Partly skimmed milk, half a glass
Eggs, 2
Breadcrumbs,
Sea salt,
Peanut oil (to fry), 1lt
Homemade bread, 1 slice
Minced beef meat, 500gr
Flour type 00 (For the breading), as much as it is needed
Eggs, 1

Mayonnaise (Accompanying sauces),
Ketchup,
Barbecue sauce,

Steps:

  • There is not a unique recipe to prepare deep-fried meatballs, there can be many ingredients according to personal taste. I propose you a base of minced beef meat to which add chopped green olives, eggs and bread soaked in milk. If you want you can also add capers, sautéed mushrooms and grated Parmesan cheese.
  • First, to prepare the deep-fried meatballs remove the crust from the slice of bread, cut into small cubes and soak them in milk.
  • Chop up the pitted green olives.
  • In a bowl, put all the ingredients of the meatballs: minced meat, olives, the two eggs, the bread slightly dried from the milk. Add salt and amalgamate everything. If the mixture is too soft, add a bit of breadcrumbs.
  • Make some small meatballs the size of a walnut.
  • At this point, prepare the breading. You will need three bowls where to put the ingredients: the flour, a beaten and slightly salted egg and breadcrumbs. Pass the meatballs first in the flour, then in the beaten egg and finally in the breadcrumbs.
  • When you have prepared them all, heat the peanut oil in a frying pan, bring it to a temperature of about 180 degrees and fry a few meatballs at a time for about 5 minutes.
  • Drain on a plate covered with absorbent paper. Still warm, you can place them in a straw paper bag, accompany them with the sauces mentioned above and serve them immediately.

Rice symbolizes prosperity and wealth, so rice balls are good for New Year's and wedding celebrations. I love these tasty little morsels, and they go well with many different kinds of food! I've served them with various meats and seafood, and they're always welcome at my table. :) Prep time includes chilling.

2 eggs
1/3 cup grated parmesan cheese
1 tablespoon dried basil or 1 tablespoon dried parsley
1/4 teaspoon fresh ground black pepper
1/2 teaspoon salt, to taste (recipe originally called for 1 tsp)
2 1/4 cups low sodium chicken broth or 2 1/4 cups water
1 cup uncooked white rice
1 1/2 cups dried breadcrumbs
2 cups olive oil or 2 cups vegetable oil
1/2 cup mozzarella cheese, in cubes (optional)

Steps:

  • In a bowl whisk together the eggs, Parmesan cheese, basil or parsley (I prefer basil), pepper, and salt; cover and refrigerate.
  • Pour the chicken broth (or water and a 1/2 teaspoon of salt) into a large saucepan and bring to a boil; stir in the rice, cover and reduce the heat to low.
  • Cook the rice until liquid is almost absorbed, about 15 to 17 minutes.
  • Remove from heat and gradually pour in egg mixture, continually stirring rapidly to coat the surface of the rice and prevent the egg from scrambling; allow rice mixture to cool in the refrigerator for 1 hour.
  • Pour bread crumbs into a shallow dish.
  • Dampen your hands with water and create 1-inch balls from the rice mixture, then coat each one with bread crumbs.
  • In a small, deep skillet, heat enough oil to cover the rice balls to an adequate frying temperature (350 degrees F) so that a piece of rice from the mixture actively sizzles when dropped in; alternately, a deep fryer may be used.
  • Fry the rice balls 4 to 6 at a time, turning as needed to ensure even browning.
  • Drain on paper towels, then serve warm as is or with a bit of marinara sauce.
  • Another nice touch you can use with these is to put a small cube of mozzarella cheese in the middle of each rice ball!
