1 Classic White Cake or 1 package 2-layer-size white cake mix
1 Creamy White Frosting or two 16-ounce cans vanilla frosting
Sky blue paste food coloring
Desired paste food colorings
Vanilla wafers
Red or black shoestring licorice
White nonpareils

Steps:

  • Prepare, bake, and cool White Cake as directed for 8- or 9-inch round layers.
  • Transfer 1 cup of the Creamy White Frosting to a small bowl; set aside. Tint the remaining frosting a light sky blue. Place one cake layer, bottom side up, on a serving plate. Spread top with sky blue frosting. Top with second cake layer, bottom side down. Spread top and sides of cake with sky blue frosting.
  • Divide the remaining 1 cup white frosting among four or five small bowls or custard cups. Tint each bowl of frosting a different color using desired food colorings. Spread each color onto a few vanilla wafers. Arrange vanilla wafers on top of cake to form a cluster of balloons and/or individual balloons. Insert a piece of shoestring licorice underneath each cookie to resemble a balloon string; bunch strings in a cluster at base. If desired, tie a piece of licorice into a bow and place at base. Sprinkle top of cake with nonpareils to resemble clouds.

1 box Betty Crocker™ Super Moist™ cake mix (any flavor)
Water, vegetable oil and eggs called for on cake mix box
1 1/2 containers Betty Crocker™ Rich & Creamy or Whipped frosting (any white variety)
Betty Crocker™ Cake Patterns Trace & Decorate
Betty Crocker™ Decorating Tips variety pack
Betty Crocker™ Decorating Icings (white, red, green, purple, orange)

Steps:

  • Heat oven to 350°F. Grease bottoms only of 2 (8-inch) round pans with shortening or cooking spray.
  • Make cake batter as directed on box. Pour batter evenly into pans. Bake as directed on box for 8-inch pans. Cool 10 minutes. Run knife around sides of pans to loosen cakes; remove from pans to cooling rack. Cool completely, about 1 hour.
  • Place 1 cake layer, bottom side up, on serving plate. Spread with 1/2 cup white frosting. Top with second cake layer, bottom side down. Spread frosting evenly on side and top of cake, smoothing surface flat. Set aside about 1 hour or until frosting is dry and firm.
  • Decorate cake as directed on Cake Patterns Trace & Decorate package, using the Happy Birthday Balloon template, Decorating Tips and Decorating Icings. Store loosely covered at room temperature.

Bake 50 minutes, or until golden and a wooden pick inserted in center comes out clean. Cool on wire rack 10 minutes before inverting on rack, turning top side up and cooling completely. Cut cake (see diagram, right) into a balloon shape. For "basket": Cut 1⁄2-in.-thick slices from cake scraps and frost together to form a 4-in.-wide, 2 1⁄4-in.-high, 1 3⁄4-in.-deep rectangle. Put 1 cup frosting into each of 3 bowls. Tint light pink, light blue and light green. Cover with plastic wrap when not using. Spoon 2 Tbsp each into ziptop bags; seal. Tint 1⁄2 cup frosting light brown. Place cake on serving tray, leaving space for the "basket." Using a toothpick, score lines on cake to divide balloon in thirds as a guide for frosting. Spread green frosting on top and sides of right side of ballon; pink frosting on the other side. Spoon blue frosting in center of cake and carefully spread to green and pink frosting. Add candy sequins. Set basket about 3 in. under balloon. Coat with brown frosting; create basket-weave design with tines of a fork. Cut tip off 1 corner of bags. Pipe outlines on balloon and swags on basket. For Balloonists: Cut heads and upper bodies from photographs; glue onto cardboard; cut out. Set balloonists in basket. Press 1-end of each ribbon into icing on base of balloon, the other end into each corner of basket. Place letters on cake. Dip ­fingers in white frosting to draw clouds.
