10 sheets frozen phyllo dough, thawed overnight
? cup granulated sugar
1 tablespoon cinnamon
1 teaspoon allspice
12 tablespoons butter, melted
5 tablespoons butter, melted
½ cup granulated sugar
¼ cup brown sugar
¾ cup honey
1 teaspoon pure vanilla extract
¾ teaspoon salt
3 eggs
2½ cups roughly chopped nuts (such as almonds, walnuts, pine nuts or pistachios, or a mixture of all four)

Steps:

  • 1. Preheat the oven to 375?F. Place a 9-inch pie plate on a parchment-lined baking sheet. 2. Make the Crust: Unwrap the phyllo dough, but keep it covered with a slightly damp kitchen towel (this will prevent it from drying out and cracking). In a small bowl, mix the sugar with the cinnamon and allspice to combine. 3. Place a sheet of phyllo dough on your work surface. Brush it all over with melted butter, then sprinkle evenly with the sugar mixture to coat. Place another sheet of phyllo dough on top of it and repeat the process. Repeat with the remaining sheets of phyllo dough. 4. Transfer the layered phyllo dough to the pie plate, allowing the excess to hang over the edge. Cover the crust with a damp paper towel while you prepare the filling. 5. Make the Filling: In a large bowl, whisk the melted butter with the sugar, brown sugar, honey, vanilla extract and salt to combine. Add the eggs one at a time, mixing thoroughly to combine. 6. Uncover the dough and place the nuts in an even layer inside the crust. Pour the custard over the nuts. 7. Fold the excess crust over the filling. Brush the crust with the remaining melted butter. 8. Bake until the crust is golden and the custard is set, 35 to 40 minutes. Cool completely before slicing and serving.

A Greek favorite that makes everyone think you are a master chef and is sooo easy to make!! I taught a Greek friend how to make apple pie and she taught me this fabulous recipe. The phyllo dough for this recipe is found in the freezer section of most grocery stores. Add a little lemon zest to the sugar sauce, if desired.

1 (16 ounce) package phyllo dough
1 pound chopped nuts
1 cup butter
1 teaspoon ground cinnamon
1 cup water
1 cup white sugar
1 teaspoon vanilla extract
½ cup honey

Steps:

  • Preheat oven to 350 degrees F(175 degrees C). Butter the bottoms and sides of a 9x13 inch pan.
  • Chop nuts and toss with cinnamon. Set aside. Unroll phyllo dough. Cut whole stack in half to fit pan. Cover phyllo with a dampened cloth to keep from drying out as you work. Place two sheets of dough in pan, butter thoroughly. Repeat until you have 8 sheets layered. Sprinkle 2 - 3 tablespoons of nut mixture on top. Top with two sheets of dough, butter, nuts, layering as you go. The top layer should be about 6 - 8 sheets deep.
  • Using a sharp knife cut into diamond or square shapes all the way to the bottom of the pan. You may cut into 4 long rows the make diagonal cuts. Bake for about 50 minutes until baklava is golden and crisp.
  • Make sauce while baklava is baking. Boil sugar and water until sugar is melted. Add vanilla and honey. Simmer for about 20 minutes.
  • Remove baklava from oven and immediately spoon sauce over it. Let cool. Serve in cupcake papers. This freezes well. Leave it uncovered as it gets soggy if it is wrapped up.

    2. Melt the butter and set aside.

    11. Take it off the heat, stir in the orange blossom water, and cool.
    12. Remove the pie from the oven and drizzle over the honey syrup. Leave it to cool completely.
    13. Chop the remaining pistachios and sprinkle over. Serve with a good dollop of thick Greek yoghurt on the side, if you like.
