Ingredients

1 pound ground beef
1 envelope taco seasoning
2/3 cup water
1/2 teaspoon ground cumin
4 flour tortillas (9 inches)
Refrigerated butter-flavored spray
1 can (16 ounces) refried beans
1/2 cup salsa
2 cups shredded cheddar cheese
Shredded lettuce, sliced ripe olives, chopped onions and sour cream

Steps:

In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning, water and cumin. Bring to a boil. Reduce heat; simmer, uncovered, for 5-7 minutes or until thickened. , Meanwhile, place each tortilla in a microwave-safe 7-in.-diameter shallow bowl, forming a shell. Spritz with butter spray. Microwave two at a time on high for 2 to 2-1/2 minutes or until crisp and lightly browned. Carefully remove from bowls to serving plates., In a microwave-safe bowl, combine refried beans and salsa. Cover and microwave on high for 1-1/2 to 2 minutes or until heated through. Spoon into tortilla shells. Top with the beef mixture and cheese. Serve with lettuce, olives, onions and sour cream.

These baked taco shells are much healthier than the fried version, plus they are super easy to make.

Ingredients

6-8 corn tortillas
oil ((or cooking spray))
chili powder ((optional))
salt ((optional))

Steps:

Brush a light coating of oil onto the tortillas (or use cooking spray).
If you want to give them some flavoring, add dashes of chili powder and salt.
Place each tortilla over two oven rungs. (You can optionally place a roasting pan or foil on a lower rack to catch any oil dripping down.)
Bake for 10 minutes at 375F for a crispy but pliable version.
Bake for 12-13 minutes for a crispier version.
Serve immediately.

Place in an 11x7-in. baking dish coated with cooking spray. Top with remaining taco sauce., Bake, covered, until heated through, 20-25 minutes. Sprinkle with remaining cheese; bake, uncovered, until cheese is melted, about 5 minutes. Sprinkle with chips., Freeze option: Cool unbaked casserole; cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Cover casserole with foil; bake as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°. Top with cheese and chips as directed.
