1 cup mayonnaise or salad dressing
1 cup freshly grated Parmesan cheese
1 can (about 14 oz) artichoke hearts, drained and coarsely chopped
1 box (9 oz) frozen chopped spinach, thawed and squeezed to drain
1/2 cup chopped red bell pepper
1/4 cup shredded Monterey Jack or mozzarella cheese (1 oz)
Toasted baguette slices or assorted crackers, if desired

Steps:

  • Heat oven to 350°F. Mix mayonnaise and Parmesan cheese. Stir in artichokes, spinach and bell pepper.
  • Spoon mixture into 1-quart casserole. Sprinkle with Monterey Jack cheese.
  • Cover and bake about 20 minutes or until cheese is melted. Serve warm with baguette slices.

(8-oz.) block cream cheese, softened

3/4 c.

mayonnaise

3/4 c.

sour cream

1 c.

freshly grated Parmesan

1 c.

shredded white cheddar, plus more for topping

1/2 c.

shredded Gruyère

(14-oz.) can artichoke hearts, drained and chopped

1

(10-oz.) package frozen spinach, defrosted and chopped

2

cloves garlic, minced

1 tsp.

lemon zest

1/2 tsp.

red pepper flakes

Kosher salt

Freshly ground black pepper

Baguette, for serving

Steps:

  • Preheat oven to 350°. In a large bowl, combine all ingredients except baguette. Mix until fully combined and season with salt and pepper.  Transfer to a baking dish and smooth top with a spatula. Top with more shredded white cheddar. Bake until bubbly and slightly golden, 30 minutes. If you’d like the dip to develop a more golden top, broil on high for 2 minutes. Serve with baguette on the side, for dipping.

Stir in 1/4 cup Parmesan cheese, cream cheese, ricotta cheese, seasonings and spinach; cook and stir until blended., Transfer to a 1-1/2-qt. baking dish. Bake 25-30 minutes or until bubbly and top is lightly browned. Remove from oven; top with remaining Parmesan cheese. Bake 4-5 minutes longer or until cheese is melted. Serve with bagel chips.
