I found this in World Jewish Digest by Rachel Burstyn as part of her article "The 411 on an Easy Fast". This was really yummy. Even with a store bought salsa it was still great.

Steps:
- To make the mango salsa: combine all ingredients in a small bowl, and refrigerate for about 20 minutes.
- For the baked salmon: preheat oven to 400 degrees.
- Place fillets on a baking sheet lined with parchment paper.
- Season each fillet with a pinch of salt, pepper, and a large pinch of garlic powder.
- Cover with seasame seeds.
- Bake for 10-12 minutes.
- Serve with mango Salsa.

- Preheat the oven broiler. Line a broiler pan with foil.
- Broil salmon steaks on the prepared pan 12 minutes, or until easily flaked with a fork.
- Heat olive oil in a medium saucepan over medium heat, and saute onion until tender. Stir in garlic, tomatoes, and cilantro. Cook until heated through, 1 to 2 minutes, and remove from heat. Mix in the mangos. Serve over the salmon steaks.

- To make salsa: Mix together mango, jalapeño, red onion, garlic, cilantro, olive oil, lime zest and juice, 1/2 teaspoon salt, and 3/4 teaspoon pepper in a bowl. Stir. Cover and refrigerate. Preheat broiler. Pat salmon dry with a paper towel and cut into 4 equal pieces. Sprinkle lightly with remaining 1/2 teaspoon salt and 1/2 teaspoon pepper. Over medium-high heat, preheat a heavy-bottomed, oven-safe skillet large enough to fit all the salmon, 3 to 4 minutes. Place salmon in skillet, skin side down, making sure not to crowd. Let cook, untouched, until flesh is opaque halfway up each fillet, about 6 minutes. (The salmon may sputter and smoke.) Transfer skillet to oven and broil 2 to 3 minutes, until fish is cooked through and tops begin to brown. Remove from oven and let rest 3 minutes. Slide a metal spatula between skin and flesh to separate them. Serve skinless salmon topped with a generous spoonful of salsa.

- Preheat oven to 400°F. Place each portion of salmon in the center of a large piece of a foil. Drizzle with olive oil; season with salt and pepper to taste; then cover with salsa. Arrange cherry tomatoes around salmon. Fold the foil over the salmon then twist the ends like a candy wrapper. Place wrapped salmon on a baking sheet, and bake 40 minutes. Be careful when you unwrap the salmon; steam will escape and can burn you. Goes with: Greek Onion Soup. Add 2 cups chopped onions, 2 medium potatoes, chopped, and 2 cups Italian or basil tomato sauce to a pot. Add water and/or vegetable broth to cover. Sprinkle with salt and pepper to taste. Boil over medium heat temperature for 30 minutes and serve.
