EASY CHICKEN & RICE BAKE | JUST A PINCH RECIPES
Polly, my BFF, gave me this recipe years ago and I have always loved it for its flavor and ease of preparation. Over the years I had to tweak one ingredient because the old recipe called for MJB Chicken Flavored Rice Mix and it can no longer be found. However, with my addition of the Rice A Roni, I can truthfully say that it does not change the flavor in any way. I hope you will try this delicious meal and enjoy it as much as my family does.

Steps:
- Pre-heat oven to 300 degrees. In a skillet, melt butter and combine rice & vermicelli mix. Sauté over medium heat until vermicelli is golden brown, stirring frequently.
- Place rice mixture in a 9" x 13" casserole pan. Add seasoning packet from Rice A Roni and 2 cups water to rice and stir well.
- Place chicken pieces in casserole.
- Sprinkle the Dry Onion Soup all over chicken.
- Spread chicken with Condensed Cream of Mushroom Soup.
- Lightly sprinkle with Paprika to add color.
- Cover with foil and bake for 1 hour. Then uncover and bake for an additional 30 minutes.
- Serve & Enjoy!

Steps:
- Start by pressing Saute and letting your pot heat up until it says HOT.
- When your pot says hot, add cooking oil and swirl the pot. Add chicken and saute for 2-3 minutes. Just until the chicken starts to turn white.
- If you are adding onion and celery, go ahead and do that now as well.
- Add water to hot pot and Deglaze by scraping the bottom of the pot. Make sure you get the browned bits off the bottom of the pot, this will add flavor to your dish.
- Pour rice a roni over the top.
- Sprinkle seasoning packet over the top. Add butter to pot.
- Poke down rice a roni in to liquid.
- Press Manual or Pressure Cook and set for 6 min on High Pressure, with 10 min NPR. Make sure pot valve is set to Sealing.
- When NPR is done, manually release the rest of the pressure. Stir contents and serve.
