BAKED QUINCE WITH CINNAMON RECIPE | ALLRECIPES
This is a very easy and flavorful autumn dessert. You can substitute any fruit liqueur or sweet red wine for the port. Serve with whipped cream or ice cream.

Steps:
- Preheat an oven to 375 degrees F (190 degrees C).
- Press three cloves into each quince half. Place the fruit in a roasting pan cut-side down. Add the water, wine, and cinnamon sticks to the pan; sprinkle the sugar over the quince.
- Bake the fruit in the preheated oven until lightly browned, about 35 to 40 minutes. Turn the quince right-side up and bake until tender, about 10 more minutes.
- Remove the pan from the oven and let the quince cool slightly. Transfer each quince half to a plate and drizzle with a tablespoon of juices from the roasting pan and a dollop of whipped cream.

Steps:
- Wash the quinces , then cut them in half and carve out the inside by digging out a small well.
- Put the walnuts with dates and raisins in a chopper and chop them into small pieces.
- Add the cinnamon to them and mix well with a spoon.
- In each half put 1 tsp. of honey and spread the mixture with walnuts .
- Bake them at 428°F (220 degrees) for about 50-60 minutes until theyre ready.
- This way the stuffed quinces become quite soft and pleasant to eat.

1. Preheat your oven to 140C fan-forced or 160C conventional.
2. Carefully cut the quinces in half lengthways and lay them in a ceramic baking dish, cut side up. Scatter over the sugar, drizzle with the honey, add the lemon and orange zest and juice and pour over the verjuice. Scatter over the cinnamon quills, cloves and bay leaves, cover with baking paper and foil and bake for two hours.
3. Uncover and cook for a further two hours. Once cooked, the quinces will be crimson in colour and there will be a thick, fragrant and almost jam-like syrup in the dish.
4. You can serve the quinces hot or at room temperature, although once refrigerated they will need to be warmed through to relax the jelly. I especially like them served warm with plenty of chilled vanilla custard but ice-cream or cream are also good.
Tips
1. When buying quinces, select ones that are fragrant and heavy in the hand.
2. Use leftover cooked quinces to make quince paste, which is delicious served with cheese. Strain the syrup to discard the spices, remove the cores and puree the flesh with the strained syrup, strain again (not too fine - you just want to keep any stray skin or pips out) and set in a lined dish in the fridge.
3. Cooking the quinces in their skins really enhances their beautiful ruby colour once cooked.

Put the sugar, wine and water into a saucepan and bring to the boil. Add the cloves, cinnamon, peppercorns and star anise.
Peel and halve the quinces and rub them with lemon to prevent them from browning.
Lower the quinces into the sugar syrup and let them simmer until tender.
They may be ready in 25 minutes or perhaps take a little longer, depending on their size and ripeness. Set the oven at 180C. When the fruit is tender to the point of a knife, lift it out and place in a shallow baking dish or roasting tin.
Add the maple syrup to the cooking liquid and pour over the quinces. Bake for 30 minutes or until the fruit is very soft and tender. Serve with the cooking juices.
