Cheesy and full of bacon, this side dish casserole is amazing. It has all the flavors of a loaded potato, just in casserole form. You can serve this at a cookout alongside steaks and burgers. It would be delicious alongside baked chicken too. If you want a more buttery taste, use Yukon Gold potatoes.

Ingredients

7 medium red potatoes, baked
1/4 teaspoon(s) salt
1/4 teaspoon(s) black pepper
1 pound(s) bacon, cooked and crumbled
3 cup(s) sour cream
2 cup(s) mozzarella cheese, shredded
2 cup(s) cheddar cheese, shredded
3 - green onion, sliced

Steps:

Cut baked potatoes into 1-inch cubes.
Grease a 13 x 9 baking dish.
Place half the potatoes in a greased baking dish.
Sprinkle with half the salt, pepper, and bacon. Top with half the sour cream.
Then top with half of the mozzarella and cheddar cheeses. Repeat the layers - salt, pepper, bacon, sour cream and cheese.
Bake uncovered at 350° for 20-25 minutes or until cheeses are melted.
Sprinkle with the sliced green onion.

In a large saucepan, melt butter over medium heat. Stir in flour, salt and pepper until smooth; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, about 2 minutes. Stir in potatoes; heat through., Remove from heat; stir in sour cream and green onions. Top servings with cheese and bacon.

Peel and dice the baked potatoes; set aside. In a Dutch oven or soup kettle, cook the bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels. Drain, reserving 1-1/2 teaspoons drippings., Add the soups, milk, garlic powder, Worcestershire sauce, onion powder, pepper, Liquid Smoke if desired and reserved potatoes to the drippings. , Cook, uncovered, for 10 minutes or until heated through, stirring occasionally. Stir in sour cream; cook for 1-2 minutes or until heated through (do not boil). Garnish with cheddar cheese and bacon.

This recipe comes from the Kirby House Restaurant in Abilene, Kansas. It is a low maintenance but flavorful potluck dish! In addition to the below ingredients, I add Penzey's Brady Street & Sandwich Sprinkle to each layer. But if you do add Sandwich Sprinkle, remember, there is salt already in it. This is a great 'make-ahead' dish that you can refrigerate or freeze until you are ready to bake. Prep time is approximate. Enjoy!
