QUICK AND EASY JUICY LAMB CHOPS, BAKED IN THE OVEN



Quick and easy juicy lamb chops, baked in the oven image

When you're in the mood for a straightforward dinner, these lamb chops will hit the spot. With no fuss, it's a juicy meal that promises to hit the spot every time.

12 rib or loin lamb chops, about 85 grams each
2 tablespoons olive oil
Salt and freshly cracked black pepper
2 tablespoons Dijon mustard
1/4 cup fresh chopped mint
Chopped mint
Herbs de Provence

Steps:

  • Preheat oven to 375º.
  • Season lamb with salt and pepper, moisten with olive oil and rub with Dijon mustard. Use a brush to evenly distribute.
  • Sprinkle with chopped mint and herbs de Provence.
  • Arrange lamb on a baking sheet and bake 12 minutes or until done to your liking.

1 tablespoon olive oil
1 lemon, zested (about 1/2 teaspoon)
1 lemon, juiced (about 2 tablespoons)
2 tablespoons finely chopped fresh oregano leaves, or 2 teaspoons dried oregano
2 tablespoons minced garlic
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
8 (4-ounce) lamb loin chops, trimmed of all visible fat

Steps:

  • In a small bowl stir together the first 7 ingredients. Put the lamb chops in a sealable plastic bag and pour the marinade over them. Move the chops around in the bag so the marinade coats them well. Marinate for 1 hour.
  • Grill or broil the chops for 3 to 4 minutes per side for medium rare.
