Yield 2 dozen

Number Of Ingredients 18

12 fresh jalapeno peppers, halved lengthwise, stems, seeds and membranes removed
6 ounces cream cheese, softened
1 1/2 cups grated Monterey Jack or mozzarella cheese
1/2 teaspoon ground cumin
1/2 teaspoon cayenne, or less, to taste
2 large eggs
2 tablespoons milk
8 teaspoons Essence, recipe follows
1 cup panko crumbs, or fine dry breadcrumbs
1/2 cup all-purpose flour
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon dried leaf oregano
1 tablespoon dried thyme
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease a baking sheet and set aside.
  • In a bowl, cream together the cream cheese, Monterey Jack cheese, cumin, and cayenne.
  • In a small bowl, beat together the eggs, milk, and 2 teaspoons of the Essence. In a shallow dish, combine the panko crumbs and remaining 4 teaspoons of Essence. In a third dish, combine the flour and remaining 2 teaspoons of Essence. Spread 1 tablespoon of the cheese mixture into the middle of each jalapeno half. One at a time, dredge in the flour, dip into the egg mixture, then dredge in the panko crumbs, pressing to coat. If necessary, repeat the process. Place the coated peppers, cut side up, on the prepared baking sheet and bake until the filling is runny and the crust is golden, about 30 minutes.
  • Remove from the oven and serve immediately with cold beer.
  • Combine all ingredients thoroughly and store in an airtight jar or container.

Total Time 30 minutes

Prep Time 15 minutes

Cook Time 0S

Yield 10-12 servings

Number Of Ingredients 11

8 strips of bacon, chopped
2 cloves garlic
2 fresh jalapenos, chopped, plus more for garnish
2 8 oz. blocks cream cheese, softened
1/3 c. mayonnaise
1/3 c. sour cream
2 tsp. Worcestershire sauce
1/2 tsp. ground black pepper
8 oz. shredded sharp cheddar cheese
1 c. crushed, thick yellow corn tortilla chips, plus more chips for serving
Sliced, toasted baguette, for serving

Steps:

  • Preheat the oven to 375 degrees. Heat a 10” cast-iron skillet over medium heat. Add the bacon and cook for 8-10 minutes until crispy. Remove from the heat and transfer the bacon to a paper-towel lined plate to drain. Remove all but a thin layer of bacon grease from the skillet (about 2 tablespoons remaining).
  • Return the skillet to medium heat. Add the garlic and jalapeno. Cook 2 minutes until slightly softened. Remove from the heat. Add the cream cheese, mayonnaise, sour cream, Worcestershire sauce, and black pepper. Stir or whisk until smooth. Stir in about two-thirds of the bacon.
  • Sprinkle the cheddar cheese all over the top of the dip, followed by the crushed chips. Bake for 12-14 minutes, until the edges are bubbly and the cheese is melted all over. Top with the remaining cooked bacon and extra slices of jalapeno. Serve with more tortilla chips and toasted baguette.

BAKED EGGPLANT RECIPE | ALLRECIPES
It was delicious. I did lightly salt the eggplant with kosher salt and let it sit in a colandar to drain for about a half hour, then wiped the pieces with a paper towel. We used fresh parm and basil instead of oregano (not a fan). Baked 375 for 40 minutes. Great recipe!
