I enjoy my cranberries baked this way. The brandy helps to cut down on the tartness of the cranberries, while the sugar gives it just enough sweetness.

2 (12 ounce) bags cranberries
2 cups granulated sugar
1/4 cup brandy
1/3 cup granulated sugar

Steps:

  • Place the cranberries in a glass 13x9x2-inch baking dish.
  • Cover the cranberries with the 2 cups of sugar, but do not stir.
  • Cover baking dish tightly with aluminum foil.
  • Bake 50-55 minutes in a 350º oven; until the cranberries burst.
  • Remove baking dish from the oven.
  • Remove the foil and stir.
  • Let stand 10 minutes, then drizzle with the brandy.
  • Stir in the 1/3 cup of sugar.
  • Cool to room temperature; then refrigerate.

Hot Cranberry Bake, a reader recipe by Sue-Sue Harstern of Louisville, Kentucky, was originally published in our November 1992 issue, but it's so good that we think it deserves a second look. In this simple, crisp-like dessert, Harstern layers fresh apples and cranberries in a two-quart baking dish, then tops the fruit with fresh lemon juice and granulated sugar. No stirring necessary! A crumbly mixture of quick-cooking oats, chopped walnuts (toast them for even more flavor), brown sugar, and melted butter (or margarine) is sprinkled over the fruit. Then the dish is baked at 325°F for one hour, or until the topping is crisp and golden and the fruit is tender and bubbly underneath. Harstern suggests serving Hot Cranberry Bake warm with vanilla ice cream and we couldn't agree more. The creamy, sweet ice cream cuts the tartness of the cranberries and dresses up this homey dessert. While we love the recipe as-is, we also like the flexibility of it. You can use any cooking apple—we prefer the flavor and texture of Honeycrisp, Fuji, or Gala, although a combination of any of these apples will also work well. I had this for breakfast this morning. My internet was off and I couldn't look up baked apples so I made this one up. I enjoyed it so I thought I would post it. I used brown sugar substitute, but you can used regular brown sugar. I kept it low in both sweet and butter but you can add more if you want. I baked it in a toaster oven at 350°F for 30 minutes. If you use sweetened cranberries, I would cut back on the sugar. Substitute margarine for butter and this is a vegetarian recipe.
