4 Chicken legs (about 200 grams)
200 grams white part Leeks
0.25 head Cauliflower
2 shallots
2 Red paprika
0.125 liter Chicken broth
2 tablespoons sherry
2 tablespoons vegetable oil
1 tablespoon ground paprika
salt
peppers (freshly ground)
2 tablespoons scallions

Steps:

  • Rinse chicken legs, pat dry and rub with salt, paprika and pepper. Fry chicken in oil over low heat until golden-brown on all sides.
  • Preheat oven to 200°C convection (approximately 400°F).
  • Peel shallots and cut into eighths. Rinse and trim leek, halve lengthwise and cut into 3 cm (approximately 1 inch) long pieces. Divide cauliflower into florets, rinse and drain well. Rinse and halve peppers, remove seeds and ribs and cut into medium-sized pieces.
  • Place chicken drumsticks and vegetables on a large piece of heavy-duty aluminum foil. Drizzle with broth. Fold edges to seal and prick several times with a needle. Lay package directly on the oven grate and bake about 35 minutes. 
  • Remove chicken and vegetables from foil, season to taste, add sherry and serve topped with chopped chives.
