Learn how to make the perfect, juicy, tender char siu, a classic Cantonese favorite!

2 lb pork shoulder
1 tbsp garlic salt
4 tbsp brown sugar
2 tbsp oyster sauce
2 tbsp light soy sauce
1 tbsp hoisin sauce
2 tbsp red wine
1 tbsp Shaoxing wine
1 cube red fermented bean curd
1 tsp five spice powder
2 tbsp honey
2 tsp water
0.25 tsp red food coloring

Steps:

  • We'll cut our pork shoulder into long slices, roughly about 1 inch thick.
  • To a bowl, we'll add:
  • Place the meat into a ziploc bag, pour the sauce in, and massage the pork for about 2 minutes so that the sauce is able to finesse its way into the meat. Afterwards, we’ll push all the air out of the bag and seal it. 
  • Preheat the oven to 425° F or 218° C.
  • Now, we’ll be placing the pork into the oven and taking it out periodically to lather it again with either our leftover pork marinade, or honey diluted with water. 
  • Once the char siu has finished its last cycle in the oven, we'll lather each side with our diluted honey.

100 ml water
1 tbsp. cornstarch
1 tbsp. light soy sauce
1 tbsp. oyster sauce
1 tbsp. hoisin sauce
1 tbsp. sugar
20 g 2 tbsp. flour
100 g 100ml water
195 g 1+1/2 cup bread flour
90 g 3/4 cupcake flour
6 g 2 tsp.instant yeast
30 g 2 tbsp. sugar(or reduce to 10g for a salty bun)
3 g 1/2 tsp.salt (or extra 3g for a salty bun)
1 middle size egg
80 g scant 1/4 cup milk
45 g 3 and 1/2 tbsp.unsalted butter, softened under room temperature
1 egg whisked + 1 tbsp. water
1 teaspoon roasted sesame seeds
1 tablespoon melted unsalted butter

BAKED CHAR SIU BAO OR MANAPUA | JUST A PINCH RECIPES
This chinese bun that is filled with char siu or seasoned red pork, evokes and fills my mind with so much sweet memories of my grammom and grampa, my mom and dad, my childhood and growing up, having my own children and now my grandchildren. It has withstood the test of time, now generations later, it is still a strong staple in my family. But no one in my family thought of trying to take on the great task of creating and making it at home, until now. It was a "Sunday kinda thing" to travel into Chinatown and buy it, come home and have breakfast with the family. My mom made Manapua, as I recall, only twice. It was just too time consuming and too much work. It was more convenient and tasty to just purchase it. It was difficult to capture that essence, that certain "taste" on your palate of chinese "char siu bao". In the photo which is not mine, the steamed manapua is on the left, the white one. The brown manapua on the right is the baked manapua. This is also a request for someone that is just "homesick" for local food. So I hope that this will comfort her, even just a little. Enjoy, LY!!!
