Cauliflower Cake Recipe - Delish image

Much like a Spanish frittata, this eggy cake is studded with chunks of fresh cauliflower, savory Parmesan, and an array of herbs and spices.

1 1/4 c. freshly grated Parmesan cheese
1 head cauliflower
3 tbsp. olive oil
1 large red onion
1/2 tsp. chopped fresh rosemary
2 1/2 tsp. kosher salt
1 1/2 tsp. ground black pepper
1 1/4 c. all-purpose flour
2 1/2 tsp. baking powder
1/2 tsp. turmeric
7 large eggs
1/4 c. chopped fresh basil

Steps:

  • Preheat oven to 350 degrees F. Butter a 10-inch springform pan and line bottom with a round of parchment paper. Butter paper, then coat pan and paper with Parmesan, tapping out excess. In a large pot of boiling salted water, cook cauliflower over medium-high heat until soft, about 7 minutes. Drain well and spread out on a baking sheet to cool and dry. In a large skillet, heat olive oil. Add chopped onion and rosemary and season with 1/2 teaspoon each salt and pepper. Cover and cook over medium-low heat, stirring occasionally, until softened, about 8 minutes. Transfer to a large bowl and let cool completely. Meanwhile, in a large bowl, whisk together flour, baking powder, turmeric, 2 teaspoon salt, and 1 teaspoon pepper. Stir in Parmesan. Stir eggs and basil into onion mixture, then add to flour mixture. Fold in reserved cauliflower. Scrape mixture into prepared pan and top with onion rings. Bake until golden brown on top and set in the center, about 40 minutes. Remove cake from oven and let cool in pan 10 minutes. Remove pan ring, cut cake into wedges, and serve warm or at room temperature.

Nonstick cooking spray, for the baking sheet
1 cup grated broccoli florets (see Cook's Note)
1 cup grated cauliflower florets 
2 eggs, beaten 
1/2 cup breadcrumbs 
1/4 cup grated Parmesan cheese 
1 tablespoon chopped capers, optional 
Kosher salt 
Freshly cracked black pepper 

Steps:

  • Preheat the oven to 350 degrees F. Spray a baking sheet with nonstick cooking spray.
  • In a large bowl, combine the broccoli, cauliflower, eggs, breadcrumbs, Parmesan cheese, capers if using and a healthy pinch of salt and pepper. Mix everything together with your hands until everything sticks together. Using your hands, make patties out of the mixture, about 2 inches across, and place onto the prepared baking sheet.
  • Bake the cakes for 15 minutes, then flip and let cook for another 15 minutes.
