2 pounds bone-in chicken thighs with skin
Kosher or sea salt, to taste
Fresh cracked black pepper, to taste
3 tablespoons extra-virgin olive oil
1/4 cup BBQ sauce, plus extra for serving
Chopped Italian parsley, for garnish

Steps:

  • Preheat oven to 375°. Line a baking sheet with parchment paper. Rinse the chicken and pat dry. Season with salt and pepper and set aside.
  • In a large bowl combine the olive oil and BBQ sauce. Toss the chicken in the marinade.
  • Lay the chicken on the lined baking sheet skin side down. Bake for 20 to 25 minutes. Turn the chicken over and bake for another 10 minutes, or until cooked through.
  • Garnish with parsley and serve with extra BBQ sauce.

2 tablespoons firmly packed brown sugar
1-1/2 teaspoons salt
1 teaspoon paprika
1/2 teaspoon ground black pepper
1/2 teaspoon garlic powder
8 bone-in chicken thighs (about 3 pounds)
1/2 cup Open Pit® Original Barbecue Sauce

Steps:

  • Preheat oven to 350°F. Line a rimmed baking sheet with aluminum foil. Stir together brown sugar, salt, paprika, pepper and garlic powder in small bowl.
  • Place chicken thighs on baking sheet. Season with spice mixture. Bake 20 minutes. Baste with barbecue sauce. Continue baking until chicken is cooked through (180°F), about 40 minutes, basting with sauce as desired.

  • Combine BBQ sauce, peach preserves, garlic, and hot sauce in a medium saucepan and heat over medium heat for 5-10 minutes, or until nice and hot.
