BROCCOLI, BACON, AND SUNFLOWER SEED SALAD RECIPE - FOOD.COM

Broccoli, Bacon, and Sunflower Seed Salad Recipe - Food.com image

I may never forgive my friend, Sarah, for bringing this to a potluck yesterday. Today, I made the recipe for myself, and ATE THE ENTIRE THING! (Will leave the results to your imagination). It was sooo worth it! YUMMM!

Total Time 15 minutes

Prep Time 5 minutes

Cook Time 10 minutes

Yield 9 serving(s)

Number Of Ingredients 9

1/3 lb cooked bacon (Applewood smoked by Neuske's is my favorite, cook slowly to extra crisp)
2 cups fresh broccoli, raw
1/2 cup raisins
1/2 cup roasted salted sunflower seeds
1 cup mayonnaise (Best Foods or Hellman's)
1/2 cup sugar
2 tablespoons white wine vinegar
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • While slowly cooking bacon to extra crisp, soak raisins in HOT tap water. Drain bacon on paper towels. Drain raisins. Pour extra fat out of frying pan.
  • In same pan (keeping the fond (browned bits), toast sunflower seeds lightly for one minute.
  • Make dressing by combining mayo, sugar, vinegar, salt, and pepper. Add crumbled bacon, sunflower seeds, and raisins.
  • Trim florettes from top of rinsed, raw broccoli - toss into dressing. (You COULD choose to nuke or steam broccoli, but would loose much of the crunch). Use veg peeler to remove tough part of broccoli stem, then dice and add to salad. Toss, cover, and refrigerate for 30 minutes.

EASY CREAMY BROCCOLI SALAD WITH BACON - EASY RECIPES FOR ...
In this simple broccoli salad recipe, broccoli is tossed with bacon, dried cranberries, red onion and a zesty dressing made with mayonnaise, Dijon mustard and apple cider vinegar. For the bacon, we recommend baking it instead of cooking it on the stovetop — it is more hands-off that way. If you are not so sure about adding bacon, try substituting with a roasted or lightly salted nut — try cashews, almonds or peanuts.

  • Pour two-thirds of the dressing over the broccoli and onion and mix well. If the salad seems dry, add a little more of the dressing. Let stand at least 15 minutes before serving or keep refrigerated (it should last 2 to 3 days, but we never have been able to keep our hands off of it for that long).

BRAISED RED CABBAGE WITH APPLES AND BACON | FOOD & WINE
F&W editor Melanie Hansche really disliked sauerkraut growing up, but sweeter, milder "rotkohl" she could get on board with. This sweet-and-sour, traditional Bavarian braised red cabbage is always served with goose, duck, or pork. To make it, the cabbage is gently braised with tart apple, smoky bacon, orange zest, and spices. You can make the braised cabbage 1 day ahead and refrigerate it overnight; reheat on low to serve. Remove any thick, white ribs when shredding the cabbage so the dish cooks evenly.

KALE AND POMEGRANATE SALAD RECIPE | COOKING LIGHT
“I like having salads and vegetables at the beginning of the day,” says Molly. “That way, I can go through the day knowing I’ve had all my vegetables and can have more cake later on.” We like her thinking! While the crinkly, hunter-green kale and sparkling, ruby-hued pomegranate seeds are both beautiful and tasty, the real star here is the almonds. They’re pan-toasted in bacon drippings, which makes them supremely crunchy and absurdly delicious. To get a head start, cook the bacon, toast the almonds, make the vinaigrette, and prep the kale 1 or 2 days ahead; pull everything together the morning of your brunch. If you can’t find lacinato kale, you can use standard curly kale, red kale, or arugula instead.
