Total Time 1 hours 10 minutes

Cook Time 40 minutes

Yield 6 to 8 servings

Number Of Ingredients 16

8 ounces cream cheese, at room temperature
1/4 cup mayonnaise
1/2 teaspoon dry English mustard
1/4 teaspoon cayenne pepper
1/4 teaspoon kosher salt
1/4 teaspoon Worcestershire sauce
1/2 cup plus 2 tablespoons shredded Parmesan
1/3 cup Onion Jam, recipe follows
3 strips bacon, cooked and crumbled
Chopped chives, for garnish
Serving suggestions: crackers, toasted bread and vegetables
1 tablespoon vegetable oil
2 yellow onions, thinly sliced
1 teaspoon kosher salt
2 tablespoons balsamic vinegar
1 teaspoon brown sugar

Steps:

  • Preheat the oven to 350 degrees F.
  • In a stand mixer fitted with the paddle attachment, beat the cream cheese until fluffy, about 5 minutes. Add the mayonnaise, mustard, cayenne, salt and Worcestershire, and continue to beat until smooth, about 5 minutes. Add 1/2 cup of the Parmesan and the Onion Jam, and mix on low speed until just combined. At this point, cook immediately or store the dip in the refrigerator until ready to serve.
  • Scoop the dip into a baking dish and top with the remaining 2 tablespoons Parmesan and the crumbled bacon. Bake until the cheese melts and the dip begins to bubble, 8 to 10 minutes. Garnish with chives and serve the dip with crackers, warm bread and vegetables.
  • In a large frying pan set over medium-low heat, add the oil and then the onions. Add the salt and cook, stirring often, until softened, about 5 minutes. Reduce the heat to low and add the vinegar, sugar and 2 tablespoons water. Continue to cook over low heat, stirring often, until the liquid is absorbed and the onions are rich golden brown, about 20 minutes. Spread the onion jam on a cookie sheet and cool to room temperature. Refrigerate any leftovers.

SWEET ONION AND BACON DIP - SOUTHERN LIVING

Sweet Onion and Bacon Dip - Southern Living image

This may be the South's best answer to French Onion Dip, and in the spirit of Super Bowl festivities, this dip can be made and thrown into the fridge a day early before being served to a crowd of hungry game watchers. Onions are caramelized in the rich fat that renders from thick-cut bacon and the sweetness of the onions is enhanced with balsamic vinegar. Since both the bacon and the bacon fat are used in this recipe, it's essential to rely on a trustworthy brand that takes extra care in preparing delicious bacon—we've found that Wright Brand bacon is second to none for the task. To the rich smokiness of the bacon, smoked paprika adds an extra layer of depth to the dip, and fresh chives are incorporated to lend a hint of fresh onion flavor to compliment the mellow taste of caramelized onion. Chewy pieces of bacon are suspended throughout and pack a savory salty punch that's perfect with the tangy creaminess of the rest of the dip. It takes a little time to make but believe us when we say that people will be talking about this dip for many Super Bowls to come.

Total Time 1 hours 20 minutes

Number Of Ingredients 10

6 pieces Wright Brand Double Smoked Bacon
2 medium yellow onions, thinly sliced
1/2 teaspoon kosher salt
1 garlic clove, minced
1 tablespoon balsamic vinegar
1 cup sour cream
1/2 cup mayonnaise
1/4 teaspoon freshly ground black pepper
1/4 teaspoon smoked paprika
2 tablespoons finely chopped chives, plus more for garnish

Steps:

  • Preheat oven to 400°F. Line a baking sheet with aluminum foil and place bacon on baking sheet. Transfer to oven until crisp and brown, about 30 minutes. Remove bacon to a paper-towel lined plate, and carefully use the aluminum foil to transfer the bacon fat to a a large skillet.
  • Place skillet with bacon fat over medium heat. When hot, add onions and salt to the bacon fat, stirring constantly for 5 minutes. Reduce the heat to medium-low and cook until caramelized, stirring regularly to prevent onion from burning and sticking to the bottom of the pan, 25 to 30 minutes. Add garlic and cook for 1 minute. Remove from heat, add balsamic vinegar, and set aside.
  • In a mixing bowl, stir together sour cream, mayonnaise, pepper, smoked paprika, and chives. Chop bacon and add to mixture, reserving some bacon bits for garnish. Add caramelized onions to mixture and stir to combine. Transfer to a serving bowl, top with reserved bacon bits and additional chives. Serve with crackers or chips.
