1/2 pound bacon strips, diced
1 cup finely chopped sweet onion
1 garlic clove, minced
6 ounces pitted dates, chopped
3/4 cup water
1/4 cup cider vinegar
1/8 teaspoon salt
1/8 teaspoon pepper
SANDWICHES:
1/2 cup shredded cheddar cheese
1 round (8 ounces) Brie cheese, rind removed and softened
8 slices sourdough bread
2 tablespoons butter, softened

Steps:

  • In a large cast-iron or other heavy skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard all but 2 tablespoons drippings., Add onion to drippings; cook and stir over medium heat until softened. Reduce heat to medium-low; , cook, stirring occasionally, until onion is deep golden brown and caramelized, 35-40 minutes, adding garlic during the last 5 minutes of cooking., Return bacon to skillet; add next 5 ingredients. Stir well. Reduce heat; simmer, covered, about 30 minutes, stirring occasionally. Cool., For sandwiches, combine cheeses, mixing well. Layer 4 slices of bread with cheese mixture and 2 tablespoons date-bacon jam; top with remaining bread. Spread outsides of sandwiches with butter. In a nonstick skillet, toast sandwiches over medium-low heat until bread is golden brown and cheese is melted, 2-3 minutes per side. Cover and refrigerate remaining jam; save for another use.

6 slices thick-cut bacon
8 thick slices sourdough bread
¼ cup (1/2 stick) butter, softened
4 tablespoons fig jam, divided
8 thick slices (about 6 oz.) sharp cheddar
Tomato soup, for serving

Steps:

  • Heat oven to 400°F. Arrange bacon on a foil-lined baking sheet and cook until crisp, about 20 minutes. Transfer to a paper-towel-lined plate to drain. Once bacon is cool, break each piece in half. Reduce oven heat to 225°F, and get out a baking sheet.
  • While bacon cooks, begin assembling sandwiches. Generously spread one side of each bread slice with butter. Flip half of the slices and spread the other side with 1 Tbs. jam.
  • Warm a large, heavy skillet over medium heat. Place two of the butter-only slices butter-side down in the pan. Layer each with 2 slices cheese and 3 pieces bacon, then top with a jam-and-butter slice, jam-side down. Grill the sandwiches until golden brown on both sides, about 3 minutes per side. Transfer sandwiches to baking sheet, and place in oven to keep warm. Repeat assembly and grilling steps with remaining ingredients. Serve with tomato soup.

  • Heat a medium sauce pot on medium heat and, after about 2 minutes, add your bacon. Stir bacon until the fat begins to render, about 3 minutes, then add onion, chipotles in adobo, brown sugar, and salt. Continue to sauté for 15 minutes until the onions are deeply browned. Turn the pan to high, deglaze the pot with red wine vinegar, add the water, and continue to cook while stirring for about 10 minutes until all the water has evaporated and you are left with a dark brown, jammy mixture. Mix cornstarch with 1 teaspoon of water and whisk into the jammy mixture. Set aside and allow it to come to room temperature. Heat a nonstick sauté pan on medium-low heat. Add 1 tablespoon of butter to the pan, then add both slices of bread. Toast for about 2 minutes on one side, until a light-golden brown, then remove from the pan, and remove the pan from the heat. Add half the cheese on top of the toasted side of one of the pieces of bread. Schmear about a tablespoon of the chipotle bacon jam across the cheese, then add the other half of the cheese on top of that. Add the second piece of bread, toasted side down, and give it a solid press with your palm.  Put the pan back over medium low heat then add another tablespoon of butter. When the butter has melted, add the sandwich. Let it cook for 7-8 minutes, periodically checking to make sure the bottom of the bread isn’t burning. Remove the sandwich with a spatula, add another tablespoon of butter, then add the sandwich back on the heat for an additional 6 minutes until cheese is gooey and bread is golden brown. Serve.
