Fresh is just so much nicer then the pre-packaged kind that uses picnic bacon and tastes like cardboard. These fry quickly and you don't have to crumble the slices after frying them. There is no need to separate the pieces. They will separate during cooking. Use these in any recipe calling for crumbled bacon or bacon bits. Perfect for salads and baked potato toppings or twice baked potatoes.

1 lb bacon
1/8 teaspoon black pepper (optional)

Steps:

  • Partially freeze your package of bacon so that it holds together easier while slicing.
  • Use a sharp knife and cut the frozen bacon into long strips about 1/4 inch wide.
  • Turn the bacon and cut the strips into pieces also about 1/4 in wide.
  • Sprinkle with pepper.
  • Fry over a medium high heat until crisp.
  • Remove with a slotted spoon and drain on paper towels.
  • You can freeze this for later use by placing the bacon bits in a single layer on a cooking sheet. Once they are frozen, place them in a zip lock bag for use in recipes, salads or baked potatoes. Freezing this way allows you to be able to take out just what you need without thawing the entire bag of frozen solid bacon bits.

Although this recipe calls for just three simple ingredients, there are a few tips that will make you a pro. Always line your rimmed baking sheet with heavy-duty aluminum foil. Watch the bacon bites, and, if they are cooking too fast on the bottom, roll them over so they can caramelize evenly. As soon as they are done, take them off the pan, otherwise they will superglue themselves to the foil. Once they are cool you can stack them in an airtight container, and they will keep for two days. You'll never have to ask "What can I bring?" again after whipping up a batch of these savory crunchy bites for your next holiday party! The requests will just keep rolling in.

2 cups packed light brown sugar
22 bacon slices
22 very thin breadsticks (from a 3.5-ounce package)

Steps:

  • Preheat the oven to 350°F. Spread the brown sugar in a large pan or baking sheet. Wrap 1 bacon slice around each breadstick, starting at 1 end of the breadstick and barely overlapping the bacon. Roll the breadsticks in the brown sugar, pressing to adhere. (At this point, you can cover and refrigerate overnight, if desired.) Place breadsticks on an aluminum foil-lined 12- x 7-inch baking sheet.
  • Bake in the preheated oven until bacon is cooked through and almost crisp, 35 to 40 minutes. Immediately remove the warm sticks from baking sheet, and place on wax paper (They will stick like glue if not moved immediately.) Cool to room temperature.
