3 cups uncooked elbow macaroni (about 12 oz)
1/4 cup butter or margarine, cut into pieces
1 can (12 oz) evaporated milk
1 1/2 cups half-and-half
3 cups shredded mild Cheddar cheese (12 oz)
8 oz (half of 16-oz loaf) prepared cheese product, cut into cubes
2 teaspoons Dijon mustard
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup chopped packaged precooked bacon (about 8 slices from 2.1-oz package)

Steps:

  • Spray 3 1/2- to 4-quart slow cooker with cooking spray. Cook and drain macaroni as directed on package, using minimum cook time. Place macaroni in slow cooker; immediately add butter and stir until melted.
  • Add evaporated milk, half-and-half, 2 1/2 cups of the Cheddar cheese, the cubed cheese, mustard, salt and pepper; stir to blend well.
  • Cover; cook on Low heat setting 2 to 3 hours, stirring once halfway through cooking time. During last 15 minutes of cooking, sprinkle with remaining 1/2 cup Cheddar cheese and the bacon.

shredded Cheddar cheese (divided)

egg, beaten

bread crumbs

Nonstick cooking spray, for the waffle iron

Steps:

  • In a medium saucepan filled with boiling water, cook macaroni until al dente, about 7-8 minutes. Drain. Melt 2 tablespoons of butter in the same pot over low heat. Add milk and cheese packet and whisk well. Turn off the heat and return macaroni to pot. Add 1 cup cheddar and stir until the cheese has melted and the macaroni is evenly coated in the cheese sauce. Stir in egg and bread crumbs until evenly combined. Meanwhile, preheat the waffle iron. When the waffle iron is hot, spray with cooking spray. Scoop about ½ cup of the macaroni and cheese into the center of the grate and sprinkle with more cheese. Close the iron and cook until golden and crispy, about 5 minutes. Use forks to carefully remove the waffle from the iron. Repeat until you’ve used up all the macaroni and cheese. Serve warm.

  • Preheat oven to 350° and butter a large, deep baking dish. In a large pot of boiling salted water, cook macaroni according to package instructions until just al dente. Drain and set aside.  In a large bowl, combine cooked pasta and butter and season with salt and pepper to taste. Stir in 2 cups cheddar cheese. Add half of the macaroni mixture to prepared baking dish. Sprinkle Colby-cheddar cheese blend over pasta mixture, then top with another layer of pasta (similar to making a lasagna).  In a medium bowl, beat together eggs and milk then pour evenly over pasta.  Cover baking dish with aluminum foil and bake for 25 to 35 minutes. Do not overbake! It may be a bit jiggly when you take it out of the oven.  Turn on oven broiler. Top with the remaining cheddar cheese. (I add a little more Colby jack as well) and broil until golden! It will firm up as it cool.
