1 dungeness crab, cooked and cleaned (about 6oz of crab meat)
4 tablespoons unsalted butter
2 large mushrooms, diced small
2 tablespoons green onions, chopped
2 garlic cloves, minced
1/2 cup spinach, slivered
kosher salt
pepper
2 large eggs
1/2 cup whole milk
1/2 cup flour
1 tablespoon parmesan cheese

Steps:

  • Preheat oven to 425°F.
  • Saute mushrooms, green onions, and garlic in 1 TB of butter.
  • In a bowl, mushroom mix, crab, and spinach with a pinch of salt and pepper to taste.
  • Place the rest of the butter in a 8" cast iron pan. Place pan in oven to preheat.
  • In a blender or food processor, blend eggs for 30 seconds.
  • Add milk, flour, pinch of salt. Blend for 60 seconds.
  • Remove pan from the oven, butter should be melted, pour in batter.
  • Add crab mixture to pan, keeping a 3/4" away from the edge, sprinkle with parmesan cheese.
  • Bake for 20 minute.

1 (8 ounce) package alouette baby brie cheese
1 (6 ounce) can crabmeat, well drained
2 tablespoons mayonnaise
1 tablespoon diced pimento, drained (from 2 oz. jar)
1 tablespoon minced shallot
2 (2 1/8 ounce) packages frozen phyllo dough, tartlet shells
1 tablespoon chopped fresh chives

Steps:

  • Heat oven to 350°F.
  • Trim rind from outside edge of cheese.
  • Cut crosswise into 6 strips. Trim rind from each strip.
  • To form 30 pieces, cut the 4 longest strips each into 6 cubes.
  • Cut the 2 shortest strips each into 3 cubes.
  • In small bowl, combine crab meat, mayonnaise, pimiento and shallot.
  • Arrange tartlet shells on large cookie sheet. Spoon crab mixture evenly into tartlet shells, about 1 teaspoons each. Top with cheese cube.
  • Bake 5 minutes or until cheese is soft and melted.
  • Sprinkle with chives.

  • Combine the green onions, cilantro and crab in a large bowl and toss with a fork to mix. Add in the Worcestershire and warm sauce and toss again, being careful not to break up the crab too much. Add in the panko and mayonnaise and toss again. Season with salt and pepper to taste. Add in the egg and mix well without breaking up the crab. Shape the mix into 2-inch round cakes and lay out on baking sheet lined with wax paper. Cover with more wax paper and refrigerateat least 1 hour to hard up. Pour the oil to a depth of about 1/2 inch in a large skillet and heat over medium heat till warm. Add in the butter. When it has melted, carefully lay the crab cakes in without crowding the pan (work in batches). Fry 2 min on each side till crisp and brown. Drain on paper towels and serve warm (with salsa, tartar sauce or possibly a puree of roasted red peppers). This recipe yields 4 to 6 servings.
