Here's what you need: avocados, eggs, salt, pepper, bacon bits, cherry tomato, fresh basil, shredded cheddar cheese, fresh chives

2 avocados
4 eggs
salt, to taste
pepper, to taste
¼ cup bacon bits
1 cherry tomato, quartered
1 sprig fresh basil, chopped
shredded cheddar cheese
2 tablespoons fresh chives, chopped

Steps:

  • Preheat oven to 400°F (200°C).
  • Slice the avocados in half and remove the pits.
  • Place the avocado halves on a baking sheet and scoop out some of the flesh to make a bigger hole.
  • Crack one egg into each hole and season with salt and pepper.
  • Top with toppings of choice and bake for 15 minutes or until yolk reaches desired consistency.
  • Sprinkle with fresh herbs, as desired.
  • Enjoy!

2 thin slices deli ham
1 avocado, halved and pitted
2 eggs
½ teaspoon everything bagel seasoning

Steps:

  • Preheat oven to 425°F. Coat a 9-inch loaf pan with nonstick cooking spray. Pat ham slices with paper towel to dry.
  • Scoop out enough of the flesh of each avocado half to leave 1/2-inch shell*. Place a slice of ham in each half and gently press to secure to avocado; place in prepared pan. Crack egg into each avocado cup. Loosely cover pan with foil.
  • Bake about 15 minutes or until egg white is set and yolk is of desired consistency. Sprinkle each serving with seasoning.
