A simple and tasty meal, its quick and easy to prepare and absolutely packed full of Fruit and Vegetables.

145g avocado
6 medium tomatoes
8g spring onion
1 tbsp white wine vinegar
7.5ml fresh lemon juice
3 tbsp olive oil
150g cooked and peeled prawns
75ml low fat mayonnaise
1 tsp fresh chives

Steps:

  • Halve, stone, peel and finely dice the avocado.
  • Chop the tomatoes and spring onions.
  • Mix together the dressing ingredients thoroughly (with a whisk, with a fork or in a screw-top jar).
  • Mix the avocado, tomatoes, spring onions and prawns in a large bowl, drizzle over the dressing and toss gently.
  • Add a little mayonnaise and garnish with chives.

This lovely avocado cake is so easy to make, especially since most of the time it will be baking by itself in the oven. The fatty but healthy mashed avocado is a great replacement for chocolate. If you add it to the base mixture, the result is a deliciously fluffy sweet snack. Upgrade it by adding a lemon-flavored glaze and crumbled pistachios on top.

For the avocado mixture: 4 eggs
1 cup sugar
2 large avocados, mashed
1 tablespoon baking powder
1 cup flour For the glaze: 1 cup icing sugar
3 tablespoons of lemon juice
pistachios, crumbled (for garnishing)

Steps:

  • For the avocado mixture:Add the eggs and sugar to the kitchen mixer and whisk. Add the mashed avocado, baking powder, and flour. Mix more until even.
  • Line an 11-inch loaf pan with parchment paper. Transfer the avocado mixture and bake for 50 minutes at 340°F/170°C.
  • For the glaze:Add the icing sugar and lemon juice to a smaller bowl. Mix until smooth using a teaspoon.
  • Glaze the avocado loaf, then garnish it with crumbled pistachio.
