This is a wonderful Japanese soup, very popular throughout Japan - with chicken, eggs, and vegetables. A meal in and of itself!

6 cups prepared dashi stock
¼ pound chicken, cut into chunks
2 carrots, diced
? cup soy sauce
3 tablespoons mirin
½ teaspoon white sugar
? teaspoon salt
2 (12 ounce) packages firm tofu, cubed
? pound shiitake mushrooms, sliced
5 ribs and leaves of bok choy, chopped
1 (9 ounce) package fresh udon noodles
4 eggs
2 leeks, diced

Steps:

  • Heat dashi stock, chicken, carrots, soy sauce, mirin, sugar, and salt in a pot over medium heat. Simmer until chicken is no longer pink in the center, 5 to 7 minutes. Add tofu, mushrooms, and bok choy, stirring until vegetables are tender, about 5 minutes more.
  • Stir udon noodles into broth and simmer until tender, 3 to 4 minutes. Add leeks and crack eggs into soup; simmer until eggs are slightly firm, about 5 minutes more.

Udon Soup - A classic Japanese meal made with thick udon noodles in a flavorful broth. This is a delicious dish that can be made in less than 20 minutes!

Number Of Ingredients 9

5 cups water
5 teaspoons instant dashi granules
2 tablespoons dark soy sauce
2 tablespoons light soy sauce
1 tablespoon sugar
2 tablespoon mirin
1 pound dried udon noodles
1/4 cup green onions, thinly sliced
Seven-spice mixture, (optional)

Steps:

  • Cook udon noodles according to the instructions on the packaging.  Drain and rinse under cold water before setting aside.
  • Bring a large pot of water to a boil.  Add in dashi granules to the water along with dark and light soy sauce, sugar, and mirin.  Bring to a simmer and let cook until the sugar and dashi have dissolved.
  • Divide noodles and broth between 4 bowls and garnish with green onions and seven-spice.  Serve immediately.

Add minced ginger and minced garlic; sauté for 1 minute. Add sake, and cook for 4 minutes, scraping pan to loosen browned bits. Add stock to pan. Bring to a boil, and reduce heat to medium-low. Add chicken, soy sauce, 1 tablespoon honey, and salt; simmer for 2 minutes or until chicken is thoroughly heated. Divide noodles evenly among 4 bowls. Add 1 1/2 cups soup to each bowl. Sprinkle each serving with 1 tablespoon green onions.
