This is an amazing fix for Chinese. Chicken, vegetables, and noodles in a delicious garlicy sauce. (Flavored with the delicious All-Purpose stir-fry sauce!) Feel free to add some mushrooms or broccoli.

Number Of Ingredients 12

2 tablespoons peanut oil
1 lb boneless skinless chicken breast, cut into bite-sized pieces
2 garlic cloves, minced
1 tablespoon fresh ginger, minced
1 onion, chopped
1 bunch scallion, chopped
2 carrots, sliced diagonally
4 stalks celery, sliced diagonally
1 (8 ounce) can sliced water chestnuts, drained
1 head cabbage, chopped
1 lb spaghetti noodles
2 cups stir-fry sauce

Steps:

  • Prepare pasta according to package directions, for minimum time.
  • Heat oil in large wok over high heat.
  • Add chicken; stir-fry until no pink is visible, roughly four minutes. remove with slotted spoon.
  • Add garlic, ginger, onion, scallions, carrots, and celery; stir-fry until softened, roughly five minutes.
  • Add cabbage; stir-fry on to two minutes, or just until wilting begins.
  • Add back chicken, water chestnuts, noodles, and sauce; stir-fry until heated through.
  • *Note: I used All-purpose Stir-Fry Sauce(Number 87748) for this.

Now you can make Chicken Chow Mein that tastes as good as your favorite Chinese restaurant. It is all about the sauce! Contrary to some other recipes Chicken Chow Mein sauce is way more than just soy sauce and sugar!

Number Of Ingredients 17

200 grams Chicken Thighs, (Boned)
0.5 tsp Baking Soda
1.5 tsp Peanut Oil
200 grams Chow Mein Noodles
4 cups Green Savoy Cabbage, Finely Shredded
1 Carrot, Julienned
1 cup Bean Sprouts
3 Shallots, Sliced into 1cm cubes / slices
2 cloves garlic, Finely chopped
0.25 cups Water
2 tsp Cornflour
1.5 tbsp Soy Sauce
1.5 tbsp Oyster Sauce
1.5 tbsp Chinese Cooking Wine
2 tsp Sugar
0.5 tsp Sesame Oil
White Pepper

Steps:

  • Velvet the chicken : Combine the chicken and baking soda in a small bowl and toss to combine. Set aside for 10 minutes to marinate, then rinse the chicken well and pat dry
  • Make The Sauce. Mix together cornflour and soy sauce, then mix in remaining ingredients.
  • Pour 1 tbsp of Chow Mein Sauce over the chicken and set aside to marinate for 10 minutes.
  • Prepare the noodles according to the packet instructions.
  • Heat oil in wok or large fry pan over high heat.
  • Add garlic and stir fry for 10 seconds or until it starts to turn golden - don't let it burn!
  • Add chicken and stir fry until the skin is white but the inside is still raw - about 45 seconds to 1 minute.
  • Add the cabbage, carrot, and the white pieces of shallots/scallions i.e. from the base of the stalk. Stir fry for 1 - 1 1/2 minutes until the cabbage is just starting to wilt and the chicken is cooked through.
  • Add the noodles, Sauce and water. Stir fry for 1 minute, tossing to coat the noodles in the sauce.
  • Add bean sprouts and remaining shallots/scallions. Stir through quickly then remove from heat.
  • Serve immediately.
