2 tablespoons butter, softened
8 large russet potatoes, scrubbed clean
3 cups heavy cream
1 cup whole milk
1/4 cup all-purpose flour
2 teaspoons salt
Freshly ground black pepper
2 cups freshly grated sharp Cheddar
2 green onions, sliced thin (white and light green parts only)

Steps:

  • Preheat the oven to 400 degrees F. Butter a large baking dish with the butter. 
  • Slice the potatoes into sticks, and then cut the sticks to create a dice. 
  • Combine the cream and milk in a bowl. Add the flour, salt and some pepper. Whisk it together well so that the flour is incorporated into the milk/cream mixture. Add the diced potatoes to the prepared baking dish and pour the creamy mixture all over the top. 
  • Cover the dish with foil and bake for 20 to 30 minutes. Remove the foil and bake 15 to 20 minutes more. Just before serving, sprinkle on the grated cheese and return it to the oven until the cheese is melted and bubbly, 3 to 5 minutes. Sprinkle on the green onions and serve it hot. Creamy, dreamy and divine.

6 russet potatoes, cleaned and peeled
2 tbsp. butter, plus more for pan
2 cloves garlic, minced
1 1/2 c. heavy cream
1/4 c. milk
1 tbsp. freshly chopped thyme
Pinch of nutmeg
Kosher salt
red pepper flakes
1 1/2 c. shredded Gruyère
1/2 c. freshly grated Parmesan

Steps:

  • Preheat oven to 375° and butter a large 3 qt baking dish. Slice potatoes 1/4" thick and place in water to keep from browning.
  • In a large skillet over medium heat, melt butter. Add garlic and cook until fragrant, about 1 minute. Add cream, milk, thyme, nutmeg, salt, and red pepper flakes. Bring to a boil and reduce heat to low. Let simmer 10 minutes. Remove from heat.
  • Layer a third of potatoes, slightly overlapping, in prepared dish then pour a third of cream mixture over potatoes. Repeat with remaining potatoes and cream to make two more layers. Sprinkle Gruyère over top.
  • Cover with foil and bake for 45 minutes. Uncover, sprinkle with Parmesan and continue baking until potatoes are tender and top is golden, 15 to 20 minutes. Let sit for 10 minutes before serving.
